Cinnamon Coffee Cake II

I took this to work and it was a huge hit! I used 1/2 cup of applesauce and 1/2 cup of oil and subbed pecans for the walnuts. Very easy. Will be a regular work treat. Thanks!

Caramel Popcorn

I just made this because I was craving something sweet. WOW!! Unbelievable!! I tried some unbaked and is was good, but baking it makes it so much better. Next time I'm going to add some nuts. The only complaint is that it's a bit greasy, but it may be cause I used buttered popcorn. Next time I'm going to use plain and see if that makes a difference. Thanks...I'll never buy caramel corn again!!

Zucchini Brownies

I made the recipe as given, minus the frosting. The mixture looked nothing like batter but was dry and crumbly. I had major doubts when I put it in the oven, but the end product was delicious! They were so moist even after 4 or 5 days. I gave some to the ladies who had given me the fresh zucchini and they couldn't believe that there was zucchini in the brownies. Great recipe, thanks!

Beer Margaritas

I made a half batch of these to try last night. The first taste I wasn't so sure, but then before I knew it I had gone through two glasses!! These are great!! But for me, adding an equal part of water would have made them too watery, so I just added a splash of water to my glass. So easy and good...thanks!!

Delicious Black Bean Burritos

I can't rate the recipe as is, but with the changes I made it was a 5. I omitted the red bell pepper, added cumin, and subbed sour cream for the cream cheese. I served the burritos with shredded cheese and salsa. They were easy, good, and very filling! The next time I think I might add tomatoes with chilis and more spice. Thanks for the great recipe! Update: Last night I made these and included the tomatoes with chilis....wow!! We loved them! The extra layer of flavor made a big difference. So easy and filling and good, will be a staple in house. We pair these with the beer margaritas also on this site.

Shrimp Scampi Bake

This gets a 5 for ease. I halved the recipe, microwaved the butter mixture, mixed in a 1/4 c of grated parm and some red pepper flakes, poured it over the shrimp and baked for about 10 min. Served over angel hair with some good crusted bread. Super easy, good meal. Thanks!

Angie's Dad's Best Cabbage Coleslaw

This was really good and a nice change from creamy coleslaw. I used 1 bag pre-shredded cabbage, omitted the celery, and halved the 'sauce' ingredients. I didn't care for it after 4 or 5 days, but thought it was best on day 2. Thanks!

I've made this twice; once with ricotta and once as the recipe is written (minus the sesame oil). It was a bit boring; I was expecting more since the reviews were so high. I might try again, but sauté the spinach with the mushrooms and garlic before.

Fruited Ice Cream

This was the first time we've made ice cream and it came out really well! (I scaled it down to 1 quart with no problems.) I took another reviews advice and put all the ingredients in the food processor. It was extremely easy and the results were great! We made strawberry Sunday night and peach last night. The strawberry was better, but I think that is because the fruit was fresh and my peaches were frozen. Will use this recipe a lot this summer. Thanks.

Calico Beans

I made this over the weekend and it turned out really well. As per other's suggestions, I subbed black beans for the lima beans. I also added chili powder and Tony Chachere's Creole seasoning to give it a little heat. Without the heat I think the recipe would have been too sweet for us. I cooked it on low in the crock pot all day. Easy and good, thanks!

Mid-Summer Italian Bread Salad

I gave this a 5, but made quite a bit of changes. I sprayed my bread cubes with olive oil and toasted them until they were golden. I didn't measure anything, just put in as much as I thought we would like. For the dressing I used olive oil, balsamic vinegar, 3 cloves of garlic (was a bit too strong), and dried rosemary (did not have any thyme). I put all this in my electric chopper and it made a great emulsified dressing. I also only used about two bunches of basil chopped and subbed spinach for the rest. We had it with pasta and loved it!! I served the bread cubes on top of the salad so they would not get soggy. Easy recipe and so easy to modify to your taste. Will be a staple now that the weather is heating up. Thanks!

Spinach Brownies

These were good, but I thought they could use more flavor. I did add garlic powder and cayenne, but think bacon would have made them great! Will add bacon next time. I did sauté the onion and spinach in the butter (only used 1/2 a stick). Might also try with some feta. Good recipe to play around with.

Ham and Pineapple Dinner

I was looking for a way to use some of the leftover ham from Easter and tried this out. I used fresh pineapple cause that's what I had, some chicken stock cause I didn't have enough pineapple juice, and omitted the mustard. Also I used a yellow onion instead of the green. It was easy and the flavor was ok. Good way to use leftovers.

Honey Glazed Ham

I used a 4lb sliced ham and halved the recipe and followed Cookeratheart's suggestions (ground clove, brown sugar, etc) except only used ½ stick of butter. I also added some cornstarch to the glaze and cooked it down to thicken it up and thought the consistency was perfect for glazing. I didn't even need to keep it on the burner, the heat from the oven was enough (didn't do the double boiler thing at all). Very easy, if a little time consuming to baste to so often, but well worth it. Will definitely use again and again. Thanks!!

Special Buttercream Frosting

I took most others advice and used 1 c shortening and 1 c unsalted butter. I only used about 4-1/2 to 5 cups of sugar and just added enough heavy cream to get the right consistency. I thought the texture was wonderful! My fiance said that next time I should use more butter and less shortening to get more of a 'butter' taste. Overall, good and easy. I'll keep tweaking it till I get it perfect for our taste. Thanks!

One Bowl Chocolate Cake III

I gave up chocolate for lent so I made this cake for Easter. I used the 'Chocolate Fudge Buttercream Frosting' for the filling and frosted with the 'Special Buttercream Frosting'. The cake itself was so easy and came out great! I took others advise and made it the night before so it could sit in the fridge. I found that it was even better the third day so I can't wait to have another piece tonight! Will make again and again since it doesn't really take any added work compared to a box cake, but it's nice to say it's from scratch!

Quick Cheeseburger Pie

This was easy and good, though not exceptional. Instead of making a crust, I used ready-made biscuits (liked the bun like quality as opposed to pie crust). I subbed colby/jack cheese for the swiss, added a can of tomatoes as others suggested, and added some bacon. Served topped with ketchup with fries on the side. Will make again since it was so easy and made for good leftovers.

Grandma's Green Bean Casserole

Made this for Easter and while no one raved, everyone liked it. I love sour cream, so it was great to me! Only change was I used 2 cans of beans since there were only 3 of us and scaled everything else proportionately. I'll probably make this again since it was so easy and a little different from the norm.

Chocolate Eclair Dessert

I have been making this for over 3 years now and it is always a hit! I only do 2 layers of graham crackers, add amaretto to the filling (gives is great flavor) and use store bought icing that I melt and drizzle over the top. So easy, so good; it's one of my staple deserts.

Fudge Cake

This was a really good chocolate cake. I iced it with a cream cheese frosting but we did not care for the combination. I will make this again though with a butter cream frosting.
