Double Tomato Bruschetta
I omitted the sundried tomatoes and the mozarella cheese and stuck with just the fresh ingredients room temp atop the toasted bread slices. Husband and I ate this up! When done this way, it's VERY close the the Stonewood restaurant's bruschetta recipe. Healthy and YUMMY!

Mock Tuna Salad
OK as a sandwich spread, but I probably won't make this again. The vegetarian husband didn't like this and I wasn't nuts about it. It would be better as a spread if you added other things to your sandwich.

Connie's Zucchini 'Crab' Cakes
My vegetarian husband loved these - even ate them as leftovers (!). I followed other reviewers' advice and added more Old Bay seasoning, but they were a little too salty for me. Next time I'll add more onion, maybe some shredded carrot and the normal amount of Old Bay. I also baked them - much healthier and just as yummy!
