About this Cook
I'm excited (and slightly scared) about the changes in my life that 2012 will bring. I have volunteered to be an AllRecipes Ambassador and am excited about the opportunities that it will bring. My family will tell you that this is not normal behavior for me as I'm stepping outside my comfort zone of staying out of any limelight. My biggest change for the coming year will be the marriage of my oldest daughter. Her engagement before Christmas was a surprise and now we are embarking on wedding planning looking at a late July/early August wedding date. Fun times ahead! I hope you don't mind that some of my blogs will be focused on that activity. Overall it is going to be a fun filled and different year for me. Welcome to my life!
My favorite things to cook
I have rediscovered my love for cooking and baking now that I have time to do it again. I especially love making breads and rolls but have also tried to expand my horizons with savory items. I am a notorious carb-aholic.
My favorite family cooking traditions
We always had the tradition of pork and sauerkraut on New Years Day for luck. I always make Monkey Bread on Christmas morning (the kind with butterscotch pudding and frozen rolls). I try to make a nice somewhat fancy dinner for whatever family is available on Christmas Eve before church services.
My cooking triumphs
My one and only attempt at Thanksgiving dinner for the entire family went well.
My cooking tragedies
I really have no "tragedies" but I cannot get the hang of homemade biscuits.

Becca's Barbequed Beans
I had intended on halving this recipe for the two of us to have as a main dish for lunch but discovered I had a 28 ounce can of baked beans. Therefore I only put 3/4 pound of ground beef in it but followed the recipe other than that. I happened to pick up Hot bbq sauce so it had a bit of a kick and we ate it like chili with cheese and onions on top. Husband loved it. Thanks!

Fiber One(R) Chocolate-Peanut Butter Haystacks
Great way to add fiber to your diet. Not a fan of the cookie/candy so much.

Great Pimento Cheese
The recipe itself is good but it has two major problems. It is NOT pimento cheese or at least nothing that I've ever recognized as pimento cheese. That however is not why I docked the star. I didn't drain my Rotel tomatoes (because the recipe didn't say anything about draining) and the end result is more of a dip than a cheese spread. You should put "drained" after the tomatoes in the ingredient list. I made the recipe as is mixing in a food processor. We will enjoy this dip that is not pimento cheese. I will probably make it again and will be sure to drain the tomatoes.
