Quick Peanut Butter Cookies
If your looking for the 'Best Ever' peanut butter cookie this recipe is not for you. BUT if your looking for a 'Great' flourless peanut butter cookie this is it! Both my 5 and 8 year old daughters were recently put on a gluten free diet. I love that I can still make them treats with out the expense of gluten free baking mixes. I used half white sugar and half brown sugar. I pulsed the two together in the food processor before adding the the egg and pb. I froze half the cookie dough for later use! Thanks for a quick and tasty dessert!
Update: I used the defrosted frozen dough and increased the bake time to 12 minutes and they came out perfect! With the extra bake time they were better than a "normal" pb cookie!!!
