Baingan Bharta (Eggplant Curry)

The recipe is almost authentic - i say almost because Indians use garam masala and not curry powder. I don't add yogurt to my baingan bharta, but adding it isn't a sin, i wouldn't heat the dish after adding yogurt. Also, the eggplant is usually fire roasted and the smokey flavor is just outstanding. Also a small teaspoon of lemon juice in the end brings all the flavors out.

Best Ever Banana Bread

This recipe works! It is moist and delicious and never, EVER last more than a day in my household of 2 adults and 1 preschooler :) I took the suggestion of other reviewers and substituted 1/2 cup of unsweetened apple sauce for oil but added 1 tablespoon of olive oil - the bread was not as moist without that one tblsp of oil. Also, I always substitute plain yogurt for buttermilk - works just fine. Love this recipe and we end up making batch almost everyweek.

Pita Chips

The chips were edible but didn't stand out. The recipe didn't mention exactly how to cut the pita pockets, so i made them two ways: 1. slit the pockets in half and then cut it into 8 wedges 2. Just cut it into 8 wedges. I felt the second option worked better, but it took a little more than 15 minutes at 400F and i turned it over once. Next time I will try increase flavor by adding some chilli powder to the recipe. Will have to work around this recipe a bit to make it more interesting

Grilled Eggplant and Feta Farfalle

I'm reviewing this recipe as I'm stuffing myself with the pasta dish - i'm about to burst. I used leftover grilled eggplant and zucchini and also leftover fusili pasta. I baked it covered for 15 minutes and uncovered for 5 minutes. The baked pasta was delicious!

Southwestern Spaghetti Squash

Good recipe. My 4 year old loved it (but then she loves most veggies including brussel sprouts). I didn't quite follow the baking instructions on this recipe, instead baked it at 350 F for 40 minutes on an uncovered, greased baking tray. I didn't have black beans, so substituted with dark kidney beans. Also,I used roasted red pepper , and balsamic vinegar instead of red wine. My family and I loved the dish. This is a great base recipe and forgives omissions and substitutions - perfect for the everyday home cook

Bev's Mac and Cheese

Great recipe! No need to open that mac'n'cheese box anymore. The first time around, I scaled it down to 2 servings but forgot to scale down the microwave time. Made this recipe a few more times and figured that for 2 servings, 1+1 minute,stiring in between, gets the sauce smooth and creamy. My 3 year old helps me make this dish and totally enjoys the dish.

Buttermilk Pancakes II

Grilled Potatoes and Onion

Wow! This recipe is a keeper! I used new white potatoes and marinated them in a cayanne,garam masala(curry powder),olive oil and salt mixture for about 30 minutes before grilling. The end result was fantastic!
