Big Soft Ginger Cookies
These cookies are amazing and addictive! They are the perfect autumn cookie. I added a little flour (less than 1/4 cup), went a little heavy on the cinnamon and cloves, used real butter, and used 2 tablespoons of Myer's Dark Rum instead of the 1 tablespoon of water. I didn't roll in sugar -- these are sweet enough without it.

Emily's Famous Marshmallows
These were a mess -- didn't solidify even after 48 hours. It could be because I used kosher gelatin.

Potato and Bean Enchiladas
These enchiladas are AWESOME! One caveat: Do NOT put the hot tomatillo/onion/cooking water mix into a blender! It will explode -- seriously! I substituted red jalapeno salsa for the ketchup and a combination of plain, soft goat cheese and shredded cheddar for the queso fresco. Yum!
