Easy Corn Chowder II

Changed this up a little by sauteing celery, onion and a little red pepper for color in butter before adding broth and potatoes. Did not drain broth before adding other ingredients so it was a little thin at first, but thickened up nicely with a little flour. Loved the kick of the cayenne, but other than that just tasted like creamed corn with potatoes to me. Very easy, but probably will not make again.

Speedy Salmon Patties

Absolutely perfect! Just like my "Nannie" used to make. I used two 6oz. pouches of Chicken of the Sea boneless/skinless pink salmon and increased crackers to 8. These were very moist as I was trying to form them, but crisped up nicely when frying. I will definitely make these many more times. Thanks!

Baked Potato Soup

Made changes based on previous reviews and what I had on hand. Basing my 3 stars solely on the fact that this was way too peppery for me and I love pepper. Think I will make again because it was easy, but definitely cut down on the pepper.

Broccoli Chicken Salad

So I changed this TOTALLY based on what I had on hand except made the dressing as written and it was excellent! I used a 6oz. package of the pre-cooked grilled chicken strips, celery instead of broccoli, omitted onion, no sunflower seeds, craisins instead of raisins and real bacon pieces. It's definitely the dressing that makes it. I will make again and again. Can't wait to try it as written too!

Chicken and Mushroom Chowder

Just made this and am having a warm bowl right now...it is delish! Made the following changes based on previous reviews: Cooked chicken breasts in slow cooker with 1/2c water, seasoning salt and pepper on low for 4 hours then could still cube the meat as opposed to it shredding. Used all chicken broth, no water. Cut oregano to 1/2tsp. Sauteed veggies in butter and olive oil. Threw in a handful of frozen corn at the end as I like my chowders with corn for that little sweetness. Could still use a little salt, but that is easily added at the table. Very easy to make, great creamy consistency and so good! Will definitely make again.

Fabulous Foolproof Lasagna

Have to agree with some others that this was way too dry for our taste and I used a 26oz. jar of sauce. Added onion and a clove of garlic as well as subbed ground beef for sausage as that is our preference. Good taste overall and very easy. I will make again, but will use 2 jars of sauce next time.

Tasty Tuna Pasta

Okay so I changed this quite a bit, but this was my base recipe so I'm rating it. Used egg noodles, an entire 16oz. jar of alfredo, cubed ham in place of tuna and frozen peas. Cut the spices back to 1/2 tsp. for the kids and added 1/2 cup milk plus panko bread crumbs on top and baked for 30 mins. The resulting dish was fast, easy and delicious! Will definitely be making again!

Colene's Easy Tomato Vegetable Soup

I changed this up quite a bit but the end result was great. Added a little onion, some celery and about 3 red potatoes and a can of chickpeas because the hubby loves them. Also used italian seasoning, garlic powder, seasoning salt and a veggie bouillon cube. We thought it was the perfect veggie soup with these modifications and so easy even with the extra chopping!

Slow Cooker Buffalo Chicken Sandwiches

I am eating this right now and it is fantastic! Like a nice spicy buffalo wing right on a bun...only no bones or fat. Followed ingredients exactly but put everything in including butter at the beginning. Cooked for about 6 hours, shredded and tossed back in the sauce to soak it up. Could not have been easier and great end result. Will definitely be doing for football season. Used Texas Pete wing sauce since I've had some in the pantry for a LONG time and it is the perfect amount of spice.

Chicken and Dumplings III

Ok so I changed this all around, but it turned out delish! I made chicken stock from the bones and skin of 2 roasted whole chicken breasts I had on hand. Used 3 cups of water, carrots, celery, one chicken boullion cube and spices in the stock. Strained the stock of the chicken pieces then added one can cream of chicken and one can cream of celery along with the breast meat and biscuits. Absolutely great comfort food and will definitely make exactly this way many times to come!

White Chili with Ground Turkey

Husband said and I quote "This is the best chili you've ever made!" which is something coming from him as he's not one to rave over food. I subbed ground chicken for the turkey, great northern beans for the cannellini and only put in a dash of cinnamon and cayenne. Also only used 2.5 cups of broth (2 cans) which was perfect for us, but very thick the next day. Will probably make again.

Slow Cooker Chicken Stroganoff

Took the advice of another reviewer and used frozen chicken breasts, 1/2 the package of italian dressing and one can cream of mushroom plus one can cream of chicken thinned out with some milk. Put it all right in from the start. No cream cheese so subbed 1/2 cup of sour cream and threw in some frozen peas about 20 mins. before serving. This turned out great. So comforting, kind of like a chicken and dumplings. I will definitely be making this again!

Chicken Tetrazzini IV

I too modified this a little by sauteeing fresh mushrooms, onion and garlic for the mushroom portion. The flavor was great, but I think I liked the mixture prior to baking as more of like a chicken spaghetti. Came out just a tad dry after being baked. Dirtied up a lot of pans too.

Simple Beef Stroganoff

I hate to give a bad review, but this was bland, bland, bland! I even took ALL of the other reviewers suggestions and added onion, fresh garlic, worcestershire, sherry, boullion, etc. and I still thought it was just tasteless. I will say that it was easy enough and husband and kids ages 3 and 1 liked it, but they like stuff on the bland side.

Italian Vegetable Soup

I have to give this one five stars because my husband said this was one of the best soups he has ever had and he is not usually one to rave. I omitted the ground beef and ended up trippling the water and adjusting the seasoning accordingly. It was very, very thick without the additional water. Very easy to make and great flavor. Will definitely make again.

Easy Minute Steaks

I dredged the steaks in flour and seasoned with salt, pepper and garlic powder. Finished as written except covered with foil for the first 45 mins. or so. These turned out great. Really tasty and so easy. Not dry at all with the addition of the foil.
