Wonderful light cookies! Everyone enjoyed them on Father's Day. I remember this being one of my Dad's favorites and surprised him with them. Big success! I did not find the dough hard to work with after 30 mins in the frig. Used parchment paper for an easy clean up. I will be making these again. Thank you for this great recipe!

This made one special Mother's Day meal! Mom's watching her figure, so I knew I had to keep it healthy & low fat but still Yummy!I made the salsa per the recipe & added some lime juice to the tuna steaks & marinated them for about 2 hours. I then took out the tuna steaks & allowed them to come almost to room temp & threw them on my Paula Deen grill. Beautiful grill marks, nice fresh salsa & a happy momma! What more could you ask for?

Not bad at all! We were looking for something different using spicy sausage & this recipe fit the bill! We added some onion & some orange bell pepper(cleaning out the fridge). We had large green olives stuffed with garlic & that worked out very well, loved the bite from the olives. The black olives added to the texture & presentation, but not much flavor.We doubled the recipe & added more rice then called for, so I thought it was i bit dry when I was mixing it, so I popped open a small can of V-8 juice & added that. Just enough moisture! Fit nicely in a 13x9 pan.
