Zucchini Cornbread Casserole

This is a GREAT way to use those overly large squash! I added 2 cooked, chopped sausages that were leftovers and this became a complete meal.

Zucchini and Corn Topped with Cheese

Outstanding ... almost a complete meal in itself. Sauteed 8-ounces of fresh sliced mushrooms in with the zucchini and onion. Yum, yum! Requires a VERY LARGE skillet.

Rhubarb Orange Cream Pie

5-stars don't even do this justice. This is both unusual AND delicious. The description refers to using orange juice concentrate (the ingredients just call for orange juice) so I used only the orange juice and got a wonderful taste blend that still allowed the unique rhubarb flavor to shine through. Also, I pre-bake this (and any crust that will be filled and baked) crust only for 10 minutes before I add the filling.

Slow Cooker Beef Vegetable Soup

All most too easy to be so good! I used 2 undrained 29-ounce cans of veg-all diced vegetables instead of the various cans called for and the small can of rotel original tomatoes PLUS an additional can of broth. Excellent ... and I don't even usually like vegetable soup!

Beef in Bay Leaf Gravy

This sounded like such a winner that I almost invited guests ... thank heaven I didn't! The only thing that can be said for this is that it tasted good BUT the appearance is AWFUL ... even after I stirred in cornstarch paste to thicken it. Don't try this!

Zucchini Tomato Soup I

Excellent "dinner" soup ... thick and stew-like. I used diced canned tomatoes since we're beyond fresh tomato season and yellow and zucchini squash for eye appeal. I also like to use several different types of pasta ... again for interest. Easy to make and I only used 1 pound of LEAN ground beef. Thanks for sharing this recipe!

Slow Cooker Chicken Taco Soup

This is an easy, GREAT recipe ... especially if you use about 1 1/2 pounds chicken tenders in place of the boneless breasts BUT ... FORGET THE BEER! Next time I'll use a can of chicken broth. Beer gives an unusual flavor that we did NOT care for.

Zucchini Pepperjack Casserole

While we really like the texture of this, the flavor was very, very bland. Next time I'll try sharp Cheddar cheese in place of the Monterey Jack and perhaps add some sun-dried tomatoes. This makes a hearty main dish so it is well worth playing with this recipe until you find the seasonings that you prefer.
