Zucchini Cornbread Casserole
This is a GREAT way to use those overly large squash! I added 2 cooked, chopped sausages that were leftovers and this became a complete meal.

Zucchini and Corn Topped with Cheese
Outstanding ... almost a complete meal in itself. Sauteed 8-ounces of fresh sliced mushrooms in with the zucchini and onion. Yum, yum! Requires a VERY LARGE skillet.

Chewy Peanut Butter Brownies
Made this for a weekend couples' house party adding 1 cup semi-sweet chocolate chips and these got WOW reviews!!! GREAT recipe!
