Easy, Cheesy Tortellini Bake

With some changes, this turned out pretty good. As other reviewers have already said, you need to either increase the amount of tortellini or cut back on the alfredo and marinara. I made it with fresh spinach, and also added some finely-diced fresh onion and some red pepper flakes to the mix. We ate it with cheesy garlic bread and a leafy green salad. It wasn't anything amazing but it was definitely a quick and easy meal. Thanks!

Pork Marsala

This turned out WAY better than I expected. I used very thick pork chops (didn't bother to pound them) and ended up pan-frying them for about 40 minutes on low (turning every ten minutes or so). I was worried they were going to be tough but I couldn't have been more wrong. The meat was SO tender and succulent, and was perfectly complemented by the mushrooms and Marsala. Awesome recipe. Easy Indian Butter Chicken

Personally, I don't really see the point in making this dish if you're going to cut way back on the butter/substitute milk for the heavy cream etc etc. The only changes I made were to increase the amount of seasonings, and I used tomato paste and water instead of tomato sauce. Served it over basmati rice with fresh cilantro sprinkled on top, and store-bought roti. Very good. Thanks!

Tomato 'n' Shrimp Pasta

I made this with all the ingredients called for, but adjusted the quantities so it was how we like them. Personally, I added the raw shrimp to the tomato mix, covered the pan, and let the shrimp cook in the sauce. I served it over anhel hair pasta with a sprinkle of freshly-snipped basil. Absolutely delicious. Thanks SO much!

Delicious Ahi Fish Burgers with Chives

I should have read the other reviews - I made this as written, and it turned out pretty bland. Next time I'll add some soy sauce, green onions and sesame oil, and cut back on the egg. It definitely needs some kind of sauce - cilantro mayo would be good, I think.

Sausage Smothered in Red Cabbage

I made this with a Pink Lady apple which I thought would be sweet enough, but I ended up adding a packet of Splenda to the mix. If I were to make this again I would probably add a splash of apple juice instead of lemon. I'm not a huge fan of caraway seeds but a wee pinch would add some extra flavor. Thanks!

The Meatball that Fell Off the Table

I didn't have time to saute the onions so I threw them in raw. I cut back on the nutmeg (not a huge fan) and omitted the parsley (hate it). The meatballs turned out a bit dense and stodgy but that was my fault for being heavy-handed with the mixing/rolling. This was a decent meal, but I think I prefer meatballs in a tomato/marinara sauce. Thanks though!

Cilantro Lime Cod

Prior to baking the cod, I sprinkled it with a generous pinch of lemon pepper, and let it sit for a couple of hours. I didn't bother softening the onions and garlic - I just diced them super-finely, and threw them in along side the fish in the foil. If I were to make this again, I would open the foil packet for the last 15 minutes of cook-time. Thanks!

Ethiopian Vegetable Bowl

It was REALLY garlicky but very very good. I cut back on the oil (1/4 of a cup??) and the cloves, used ground fenugreek instead of seeds, and I added maybe 2/3 of a can of chicken broth as it was getting rather dry. We ate it with paratha. I think I'll add a handful of peas next time. Thanks, alemana!

Easiest Spicy Cod

I'm often baffled by recipes that call for parsley when cilantro is clearly a better option. This is one of those recipes. Yep, this recipe is really easy, but it's also super customizable. I used regular store-bought salsa but added a finely diced jalapeno, the juice of a large lime, a small pinch of Chipotle pepper powder, plus the obligatory fresh cilantro. I served it over Mexican rice with a side of black beans/bacon/cilantro. Husband wolfed it down. Thanks!

The Captain's Famous Jambalaya

With a few tweaks this turned out great, but I can't see how it would take an hour to cook the chunks of fish. I added mine (I used cod plus a few shrimp) about 20 mins towards the end of the cook time, and that was perfect. Other changes I made were to omit the file powder and ground cloves (didn't have any) and I used chicken broth instead of mushroom. Finally, I made the rice in the rice cooker then just poured the jambalaya over the top. Very tasty. Thanks!

Fast Chicken Soup Base

I stopped by my local grocery store late last night, and saw they were selling off rotisserie chickens for a buck a piece. I nabbed the last two. Bargain! Of course, nothing beats homemade chicken broth, but this was a fantastic substitute. I'm not a huge thyme fan so I used an Italian herb blend instead. I also threw in a small diced potato. With some additional seasoning (pepper, a little salt, and garlic powder) this turned out much better than I expected. Next time I'll add pasta and some canned corn to make it even heartier. Thanks!

Cherry Almond Smoothie

I made this with strawberry yogurt as I couldn't find cherry. I liked the almond taste but wasn't crazy about using canned mandarins (the flavor was just ok for us; a little too subtle). I'll make this again when Colorado peaches are in season.

Curried Shrimp Bisque

Oooh, this was good! I roughly chopped up the shrimps for the bisque but garnished it with a huge tiger prawn (tiger shrimp? Not sure of the difference). I diced the onion a little chunkier than the celery, and used a small splash of Marsala wine instead of brandy. The green onion sprinkles were pretty, but next time I think I'll use fresh chives. This was super delicious. Thanks so much!

The only changes I made were to add a little fresh mint, and I decreased the rosemary and marjoram. The meat turned out a little dry but that was nothing that a drizzle of tzatziki sauce couldn't fix. Served it sliced in pitas with tomato, onion and shredded lettuce. Very good. Thanks, R B Miller!

Braised Tofu

I've made so many mistakes cooking tofu in the past. It's usually just ended up a bland ugly mess. For this recipe, I marinated cubed extra-firm tofu overnight in a mixture of hoisin sauce, oyster sauce, Thai chili and garlic paste, sesame oil, and minced garlic. I then pretty much followed the recipe, although I ended up adding a bit more oyster sauce to the mix. I served it over angel hair pasta, with a sprinkle of sliced green onions. Good stuff. Chili Colorado

This doesn't resemble any chili that I've had here in Colorado, but it was still pretty good. I fiddled around with the seasonings a little, and probably should have added a can of pinto beans. Served it over brown rice. Not bad at all. Thanks, Ron!

Sassy Sausage and Black Bean Soup

The only changes I made were to use extra spicy Andouille sausage, and I added some onion and garlic powders. Oh, I also omitted the water as I wanted it to be more of a stew. If I were to make it again - which I probably will as it was so quick, easy and tasty - I would add a can of corn. Thanks!

This turned out kinda bland with a heavy cakey texture. The only change I made was to use full-fat extra-sharp Cheddar (I upped the amount too). It needs more salt, and maybe some garlic. I would probably add a small can of creamed corn too.

Grilled Chicken Breast with Cucumber and Pepper Relish

Even with a few tweaks, this was still pretty mediocre. I marinated the chicken for about 16 hours (added a little garlic powder to the mix), used fresh cilantro instead of parsley, and also squeezed half a lime into the relish. I probably should have pounded the chicken thinner so that it absorbed more flavor (also could have added some Chipotle powder), and some fresh jalapeno would have been a nice addition to the relish. Oh well. Thanks anyway!
