Mom's Irish Ziti

This turned out ok but it was kind of a waste of ground lamb (you couldn't taste that it was lamb at all. Next time, I'll stick with ground beef). The only changes I made were to stir the Italian seasoning and red pepper flakes into the meat mixture, and I also added a little ricotta cheese that needed using up. This was a quick and hearty meal on a chilly evening. Thanks!

Black Pepper Beef and Cabbage Stir Fry

Quick, easy and customizable. Like other reviewers, I added a bit more seasoning - sesame oil, some onion powder, a dash of hoisin sauce. I also added sliced green onions, and sprinkled some toasted sesame seeds over the finished dish. Not bad at all. Thanks!

Salami and Kalamata Primavera Salad

I made this two days in a row, first as written (plus a little dash of olive oil to keep it moist), and today with a couple of changes. Today I used Feta instead of Provolone, and I also added some diced English cucumber. Delicious! Next time I make it (which will probably be tomorrow), I'll add some red onion. Thanks!

Cauliflower Side Dish

I divided the cauliflower into small florets, and then simmered them til tender. I thought the finished dish was ok as written, but a generous sprinkle of freshly-grated Parmesan made a huge difference. I think I'll make it with Gruyere next. Thanks!

Quick and Easy Chicken Noodle Soup

As written, I give this soup 4 stars. Sure, it would be wayyy better with homemade chicken broth and veggie broth, and I would probably replace the dried oregano with fresh, but as a quick and easy soup that calls for ingredients that are always in my cupboard, this is good. Like others, I made this with the shredded meat from a rotisserie chicken (I also threw in the skin for a little extra flavor, but removed it prior to serving). All in all, not bad. Thanks!

Tender Chicken Nuggets

Not bad but needs a bit of tweaking. I added a pinch of Italian herb blend, a little salt, and also some garlic powder to the crumb mixture. I wish the coating had gone on a bit thicker, and also that the nuggets had crisped up more. A few of my chunks were a bit thick, so I baked the chicken for about 30 mins just to be on the safe side. These definitely need a dipping sauce of some kind - next time I'll whip up some honey mustard or something. Thanks!

Twice Fried Fish

I made this as written, and thought the sauce was super sour and strong-tasting. I diluted it down a bit with low sodium chicken broth, but it was still really salty and overwhelming. I don't really understand the whole "twice fried" thing tbh. It didn't add anything to the fish at all. Anyway, this turned out ok but not amazing. There are better ways to cook cod imo. Thanks anyway!

Chicken Fettuccini Alfredo

Great flavor but needs more cheese. It was a little thick so next time I would cut back on the flour. The texture wasn't as smooth and creamy as I would have liked. I would definitely make this for company but will probably just stick with jarred Alfredo sauce for myself and Husband. Thanks!

Denver Omelet Pie

I made a few small changes. I pressed the thawed hash browns into a greased pan, and baked it for about 20 mins. I then poured the egg mixture on top, and returned the pan to the oven. I omitted the thyme and green pepper (we're not fans), and I used some grated Gruyere cheese as well as Swiss. If I were to make it again, I would use bacon instead of ham. Still, this was a very filling and delicious brunch dish. Thanks, Barbara!

Broccoli and Stilton Soup

I made this with some really stinky English stilton (I love that stuff!). Apart from adding a little more broth, I pretty much made this as written. It was good but I still prefer Stilton and cauliflower soup. Thanks!

Kiki's Borracho (Drunken) Beans

This isn't my kind of dish at all, but Husband really enjoyed it. I made it with Amber Bock beer (nice flavor, not too heavy) plus I threw in some finely diced fresh jalaps as well as the jarred kind. I omitted the oregano, and added a few good shakes of Adobo seasoning. I mashed everything up a little, and served it with flour tortillas and sour cream. It would be great with some homemade guac too. Like I say, I wasn't wowed by it, but Husband was extremely appreciative. Thanks, Kiki!

Mushroom and Mascarpone Ravioli

Although several of the ravs fell apart during cooking, the ones that stayed intact were really delicious. I made them with regular yellow onion, and a combination of button and chestnut mushrooms. I'm glad I didn't omit the fresh chives like I'd intended - they added a really nice flavor to the mix. Thanks!

Pasta Primavera with Italian Turkey Sausage

This turned out better than I thought. The only changes I made were to use turkey kielbasa (as that's what I had on hand) and I omitted the yellow squash as I had a few zucchini that needed using. The dish was filling but also very light. Very easy to throw together too. If I were to make it again, I would add a few more seasonings. Not at all bad as written though. Thanks!

Cabbage Jambalaya

Great basic recipe. I forget to defrost some ground beef so I omitted it. Also left out the celery as Husband hates it. It was a tad bland so I added an onion bouillon cube and some crushed red pepper flakes. It turned out ok - nothing really to rave about, but it was hearty and filling on a chilly Colorado night. Pretty Chicken Marinade

Apart from using full-sodium soy sauce, and also adding some prepared Colman's English mustard, I made this as written (I was a bit worried about the amount of liquid smoke but it actually turned out to be very subtle. Probably because it was a year or so old). I marinated the chicken breasts for about 8 hours, and, while I thought the flavor was decent, it was a little bit tart/sour for my taste. If I were to make it again, I would add a good-sized pinch of brown sugar. Thanks though!

Curried Chipotle Potato, Spinach and Cheese Wraps

Not bad but kinda bland. I used sour cream instead of cream (increased it quite a bit) plus a combination of crumbled queso fresco and a Mexican cheese blend. Not really sure what I could have done to make it more flavorful - maybe add cumin to the cream mix, or sprinkle on some fresh cilantro. Thanks anyway!

Asian Beef with Snow Peas

I marinated the beef for about 2 hours in a mixture of soy sauce, sesame oil and chili/garlic sriracha, then followed the recipe. Talk about quick and easy! Served it over brown rice with a couple of store-bought egg rolls. Not bad at all. Thanks!

Erin's Indonesian Chicken

I used lime juice instead of lemon, and also garnished the dish with lime wedges, plus a sprinkle of freshly-snipped cilantro. I just added the green beans and sauce mixture to the browned chicken chunks. Part from that, I made this pretty much as written. Delicious. Thanks!

Peppered Corn Bread

I omitted the red pepper because I didn't have any. Doesn't matter - Husband went CRAZY for this!! I'm not much of a baker (actually, I'm horrible at baking), but these turned out amazingly light and fluffy. I think the key is to not over-work the batter; just fold everything in together gently. I baked the mixture in a muffin cup sheet thing for about 20 mins. Perfect. As I type, he's eating them cold, drizzled in honey...
