Sole Steamed with Tomato-Leek Sauce

Not bad. The leeks were a little bit strange with the other flavors, and the fish didn't look very appetizing either. This isn't something I'll be making again, but thanks anyway!

Ginger Beef

I wasn't sure how this was going to turn out. All in all, it was just ok, I guess. I recommend omitting the salt - the soup provides more than enough. I ended up adding a little V8 juice because it got a bit dry. I didn't have time to make rice so I just served it with some steamed broccoli and cauli. I won't be making it again, but thanks anyway!

Ground Beef Mexican Style

Quick, easy, inexpensive, and very customizable! I made a couple of changes due to ingredients I had on hand. First I had half a packet of taco seasoning that needed using up, so I added that to the meat. I omitted the bell pepper as we don't really like it. Because I made it ahead of dinner time and it dried up a little, I added half a cup or so of picante sauce. I served it over wheat rotelle, and sprinkled some fresh cilantro on top along with the grated cheese and diced grape tomatoes. This isnt a fancy dish obviously, but it's great for when you don't have a lot of time in the kitchen. Thanks, Kris!

One Dish Jambalaya

This was nothing like any jambalaya I've ever had before, but it was still tasty and easy to make. I used Andouille sausage, and made it with brown rice. It was a touch salty due to the FO soup but it wasn't too terrible. All in all, a pretty decent meal. Thanks!

Cajun Chicken Lasagna

I left out the celery and bell pepper as we don't much like it cooked. I browned the chicken and sausage, then just added in the onions and garlic - worked just fine. If I were to make it again, I would add some canned corn, as a previous reviewer suggested. The only other change I made was to put it under the broiler for five minutes to make the cheese really brown and bubbly. This was a rich, tasty and spicy dish. Thanks!

Black Bean Huevos Rancheros

I used all of the ingredients in the recipe but adjusted them a bit according to personal taste. I'm not a fan of Heuvos Rancheros, but Husband is, and he said this was absolutely the best he's ever had. Because I made it super spicy (two jalapenos and three huge chipotle chiles in adobo sauce), I drizzled a little sour cream over the fried eggs, then sprinkled some fresh cilantro over that. AMAZING! I'll definitely be making this again. Thanks, ZZ!!

Oven-Fried Potatoes

I had some wrinkly spuds that needed using up, and a heel of Parmesan that had also seen better days. I can't believe everything turned out so delicious! Like other reviewers, I added a splash of olive oil to the bag of seasonings. The potatoes took about an hour to completely soften so maybe my chunks were a little to big. This would be amazing with some diced onion too. Served it with Marinade for Chicken-marinated chicken, and plain steamed broccoli. Awesome. Thanks so much, Delores!

Marinade for Chicken

I omitted the parsley as we don't like it, and I used prepared English mustard. Marinated the chicken breasts for about 12 hours, and cooked them on the Foreman grill. They turned out very moist, and there was quite a lot of flavor. Still, if I were to make this again, I would add a little freshly-minced garlic to the marinade. Nice recipe. Thanks!

Vegetable Curry

Yep, you definitely need to keep an eye on this while it's cooking, and add liquid when it gets dries out (I used chicken broth). I cut back on the pepper flakes since I was making it to go with the already-spicy Yogurt-Marinated Salmon Fillets (Dahi Machhali Masaledar) from this site. I also omitted the tumeric as mine has been in the cupboard too long and has got kinda sour. Next time I'll use peas insetad of carrots (we didnt really care for the taste). Not bad though. Thanks!

Yogurt-Marinated Salmon Fillets (Dahi Machhali Masaledar)

Husband is a big fan of salmon with curry flavors, and this recipe did not disappoint. I marinated the fish for about 8 hours which was plenty. I cut back on the cayenne a little, and it still turned out pretty spicy. If i were to make this again, I would add a little bit of lemon or lime juice. Good stuff. Thanks!

Mushroom, Leek, Chicken Sausage and Tortellini Soup

I omitted the tortellini and cut back on the broth because I wanted to serve the mixture over angel hair pasta. I didn't like the idea of boiled sausages so I browned them, whole, in olive oil, then sliced them up. Flavor-wise, I thought it was missing something, but I'm not sure what. Not bad though. Thanks!

Chinese Tomato Soup: Dutch-Style

I've bought a few packet mixes of Chinese Tomato Soup in the past, and really liked it. Apart from leaving out the celery, I made this as written, and, sadly, didn't like it all. The flavors just didn't work well for me. The apple sauce made it really sludgy, and I wish I'd omitted the brown sugar because it turned out SO sweet. I even made fresh prawn crackers to go with it (and the oil smell totally stank out my house). Sorry for the low rating.

Mushrooms in White Wine Sauce

This mushroom sauce can be used with anything! I've had it with a simple grilled chicken breast or baked cod/ tilapia filet, over various pastas, and also as a baked potato topping (add a little grated cheese). I use white wine or marsala wine (whatever I have on hand). If I have some cream or half and half in the fridge, I add a splash of that, but it's still great without. Definitely use fresh garlic - garlic powder just doesn't work as well. Delicious and versatile. Thanks so much!

Spicy Noodles - Malay Style

This was ok. It has a lot of potential though. The only changes I made were to use baby bok choi instead of spinach (I don't like the sludgy texture of spinach when it's cooked) plus I mixed some chili garlic sriracha into the Thai paste for some extra kick. I didn't really like the peas in this - if I were to make it again, I would use snow peas. This was a quick, easy and pretty healthy meal. It needs a few tweaks though.

Catherine's Spicy Chicken Soup

I wanted this to be more of a spicy chicken chilli/stew, so I omitted the tomato soup and the canned whole tomatoes, and cut way back on the chicken broth. Apart from adding some Adobo seasoning, I made this pretty much as written. It turned out hearty and filling. It's easy to make, and I usually have all the ingredients in the cupboard. Thanks!

I peeled the tomatoes (I let them sit in a bowl of boiling water for a few mins, then removed the skins), and I omitted the parsley as we don't like it. I added the thawed raw shrimp to the tomato/onion mix, let the shrimp cook through, then spread everything into a glass baking dish, topped it with crumbled feta, then broiled for a few minutes so the feta was melty. It turned out really good! Thanks!

Pan Fried Catfish Filets

I can't stand catfish tbh but Husband loves it. The only thing I did differently was to omit the fresh garlic and use garlic powder instead. It's a shame that frying catfish completely stinks out my house, or I would make it more often (Husband loves it fried but is kinda "meh" when it's oven-baked). Served it with fresh green beans, store-bought biscuits and homemade sausage gravy. Not bad at all. Thanks!

Creole Macaroni and Cheese

With a couple of changes, this turned out AMAZING. My only real problem was that it just wasn't cheesy enough - I added a lot more Gruyere and Cheddar, and also a handful of shredded Swiss. I omitted the celery (not a fan), and simply sauteed the onions along with the Andouille. This ended up being a fantastically rich and tasty meal. Thanks, Craig!

Grilled SPAM®, Tomato, Cheddar Cheese, and Sweet Onion Sandwiches

Daaaang, these are good! I bought a bunch of those "Spam Singles" really cheaply a while ago, and this recipe is perfect for them. The only thing I do differently is to make the sandwiches with sourdough bread - I really dislike wheat bread with grilled cheese. Oh, and red onion is a must. This is quickly becoming one of my favorite lunchtime eats. Thanks!
