Coq au Vin alla Italiana

Pretty good. Prefer it with white wine, and thyme as well as rosemary (just a little bit of each). With some nice crusty bread, this makes for a hearty comforting meal. Thanks!

Calico Beans

Really great basic recipe you tweak to your liking. I usually omit the butter beans (hate them) and double up on the kidney beans. It's a bit sweet made as written so I also cut back on the sugar. Really good if you add some garlic powder and a bit of paprika too. My 22 month old loves it with steamed rice. Thanks, Kathy!

Classic Minestrone

Great basic recipe you can tweak according to personal taste and what you have on hand. Personally, we prefer it with kidney beans, but cannelli beans are pretty good. I cut way back on the thyme, and usually use Italian seasoning. Fresh minced garlic and a couple of bay leaves add some nice flavor too. Thanks, Michelle!

Balsamic Roasted Carrots

Not bad. Agree that the balsamic really only adds a bit of a twang to the carrots. I made this with some really thick carrots that I halved lengthwise, and they were done in about 45 minutes. Thanks anyway!

Faye's Pulled Barbecue Pork

This was the first barbecue pork recipe I used after moving to the US. It's pretty good made as written but I now prefer to omit the cayenne, and use chipotle powder instead. I also use V8 juice instead of water for a bit more flavor. Thanks, Faye!

Easy Grilled Lemon Chicken

I've made this at least 10 times this summer - so easy and it tastes amazing! I tried it with lime juice instead of lemon but didn't like it nearly as much. Also did it on the Foreman grill but it wasn't nearly as good as on the charcoal grill. I marinate it for about 24 hours, and the flavors just pop in your mouth. Even my 19 month old loves it! Thanks!

Beef Brisket with Chipotle Tomatillo Sauce

I've made this with brisket and with pork tenderloin, and I prefer it with pork. I don't own a pressure cooker so I make it in the crockpot - turns out great. One can of chipotle peppers is really really spicy, so I use about half - still a little too much for me but Husband loves it. (he says the leftovers are even better the next day) Thanks!

Nell's Cabbage Salad

I cannot stop eating this stuff! I agree that you need to toast the almonds and noodles - only takes a few minutes but it makes all the difference! Great by itself but I also really love it with a pan-seared tuna steak (I add a bit of sesame oil to the salad dressing). Thanks!

Braised Rabbit with Mushroom Sauce

Absolutely phenomenal! The only thing I did differently was to brown the rabbit pieces in bacon fat, and I used half water/ half milk in the sauce. Will definitely make this again, although next time I will probably serve it with mashed potates. Thanks, Bluemonday!

Chinese Steamed White Fish Fillet with Tofu (Cantonese Style)

The marinate/sauce was really really good but I didn't much care for the texture of the steamed fish, and the tofu was just blah. Will try it again with baked fish and will omit the tofu altogether. Thanks anyway.

Pork Marinade

What a great easy and tangy marinade. The only change I made was to use Splenda instead of sugar (added it a tiny bit at a time) Marinated some boneless pork chops for 24 hours, and they came out great. Husband said he'd like a bit more spiciness next time. Thanks!

Ranch Burgers

Smoked Salmon Pizette

I'm not a big fan of smoked salmon (nor capers actually) but these were pretty good. Like others, I made them with toasted mini bagels. I agree though that the sour cream is a bit overwhelming - I'll cut way back next time.

Jamaican Barbecue Sauce

AMAZING! Tweaked it a little bit (less molasses and thyme, a bit more mustard) and also added a couple of cloves of fresh minced garlic. Had it with grilled chicken breasts and corn on the cob. Looking forward to trying it with ribs! Great recipe. Thanks, Lee Ann!

I've made this a couple of times, once as written (really like the crunchiness of the bell pepper and celery) but I prefer it with broccoli instead of peas and celery. Be prepared to add more mayo/ sour cream as it does dry out a lot when you let it sit for 24hrs. Thanks, Karena!

Apple Jack Iowa Pork Chops from Des Moines
