Fish in Foil

No smell, no mess, no major clean-up... It doesn't get much better than this! Husband likes things spicy so I added two sliced jalapenos to his foil packet. Also used lemon pepper instead of the regular variety. This was a super easy mid-week meal. Thanks, Denyse!

Avocado and Bacon Soup

I wasn't sure about this the first time I tasted it, but it definitely grew on me! I used an immersion stick blender til it was the consistency I wanted. Ate it for lunch with lightly-toasted Italian bread. Really good! Thanks!

Chicken Sandwiches with Zang

Like others, I pound the chicken breasts thin so they absorb more flavor, and I marinate the chicken in bbq sauce and a sprinkle of dry Italian dressing for a few hours. I cook them on the Foreman grill, and it takes no time at all. This is a great, filling sandwich for lunch - keeps me going all day! Thanks, Heather!

French Vanilla Cream Puffs

Soooo good! The puffs fluff up beautifully, and the vanilla filling is so rich and creamy. I prefer to melt the chocolate and drizzle it over the top - looks kinda pro! I'm not much of a baker but these come out perfect every time. Thanks so much, Lean!

Thai Green Curry Prawns

I had to omit the lemon grass as it was way too woody to put through the food processor. The only other changes I made were to add more soy sauce (low-sodium) and a splash of fish sauce. I'm not a big fan of canned baby corn but they worked great in this recipe. Served it over wide rice noodles as that's what I had on hand. Good stuff! Thanks, Lee!

Crispy Cheese Twists

This is a great recipe for using up puff pastry. I add a little salt and up the amount of Parm. I also squirt some cooking spray on the baking sheet so the seasoning doesn't stick to it. This is a tasty little snack. Thanks!

Sesame Shrimp

I quadrupled the amount of marinade for 2 servings, and simmered it for about 15 minutes before throwing in the marinated shrimp. I also added some sliced green onions. It turned out great but would be even better with broccoli, mushrooms etc. Not bad at all though. Thanks, Jennifer!

Puff Pastry Salmon

Apart from topping the salmon with some finely diced fresh mushrooms, I made this as written, and it turned out pretty well. If I were to make it again, I would roll out the pastry - it was a bit too much for the piece of fish I used. Oh, and definitely cook it on a rack - this avoids the soggy bottom that other reviewers complained about. Not bad though. Thanks, danigirl!

Made this with pork tenderloin and serrano chilis as that's what I had on hand. Tweaked the seasonings a little and simmered for about an hour until the meat was melt-in-the-mouth tender. Turned out great - very hearty and flavorful. Thanks!

Spicy Tortilla Roll-Ups

I only really made these because I had things in the fridge that needed using up. They were an unexpected hit! I used jarred roasted red peppers instead of pimentos, and jarred jalapeno slices instead of canned chiles. I upped the amount of olives as they weren't terribly flavorful. Turned out great. Thanks!

Spicy Mango Sweet Potato Chicken

I used baked sweet potatoes, decreased the amount of honey, and ended up adding a little salt as it was still too sweet. It turned out ok but not something I'd make again - the flavors just didn't work well together for us. Thanks anyway.

Chicken Eugene

The only change I made was to pound the chicken breasts flat, place two or three slices of dried beef on the chicken, roll it up, then wrap in bacon. I then poured a mixture of FF sour cream and low-sodium CoMushroom soup over the top. This was a rich and satisfying meal - served it with steamed broccoli and buttered baby potatoes. Thanks!
