Sausage, Peppers, Onions, and Potato Bake
This recipe is definitely a keeper. Browning the potatoes before adding to the dish, and the addition of the wine to the stock really sets it apart from other similar recipes. I added carrots and adjusted the amount of peppers accordingly.

Braised Balsamic Chicken
I made this with a fig balsamic vinegar, cut the chicken into bite size pieces and marinated in the balsamic/herb mix for about 20 minutes. Served over rice, wonderful! The leftovers were great too!

Baked Teriyaki Chicken
I made this exactly as written and it is delicious. I served it with rice and julienned vegetables- next time I would double the sauce as others have suggested because it was so tasty.
