Chocolate Chip Pumpkin Cookies

I should have known from other reviews that I wouldn't like these... they are VERY cakey (I prefer flatter, chewier, crispier cookies), but I thought I could "fix" them by slightly altering the recipe. I used half butter half shortening, and half white half brown sugar, but I don't think that made a difference. They are very puffy and kept whatever shape they were put on the pan--they don't spread at all (my first batch came out in little balls because I used a cookie scoop, after that I tried flattening them a bit before putting them in the oven). I added extra cinnamon and nutmeg as previous reviewers suggested, but they still tasted bland to me. The only good thing about them was the chocolate chips! If you like cake-like cookies you'll probably like these, but they just weren't for me.

Cucumber Punch

Everyone loved this, but I can't really give it 5 stars because I didn't follow the recipe exactly. I used real lemonade (a bottle of Simply Lemonade), and added a liter of club soda to cut the sweetness and add some fizz. It was great!

Whitechapel Shepherd's Pie

I made this for my husband and we both loved it! I would recommend cooking the vegetable seperately since the rutubaga needs more time to cook and the other vegetables need less. I didn't pre-cook the peas at all and just added the frozen peas directly to the meat along with the other vegetables. I also would use a 15 oz. can of tomato sauce rather than 8 oz. because it didn't seem saucy enough (I added some left over pasta sauce we had in the fridge and it worked great). For the potatoes I used a whole package of the frozen Ore Ida steam and mash potatoes and they worked great :) Yummy!

Crisp Lemon Sugar Cookies

I substituted real lemon juice for the lemon extract and milk and also added the zest from half a lemon. Everyone in my office loved them, but I think I would prefer them a little more lemony so next time I think I'll use more lemon zest.

Oma's Fabulous Matzo Ball Soup

This was good, but we ended up with enough matzo ball mix to make matzo balls for 5 pots of soup! I threw most of it away.

Cherry Cordial Cookies

I sent these to my husband who is deployed and he really liked them. He shared them with his office and his boss said they were "awesome". The only change I made was with the chocolate chips. We don't like white chocolate so I just used a full cup of semi-sweet.

Oh my gosh, this is so wonderful and refreshing! Be careful though, it tasted so delicious I almost forgot how much alcohol was in it and before I knew it I'd had three glasses and was feeling pretty good :)

Easiest Eggplant

Really good! I used regular mayo and added 2 cloves of garlic to the mayonaise. I thought it might be too much garlic, but it tasted great! I'll definitely make this again.

Easy Lemon Cookies

Not impressed. I definitely picked up on the fruit loops taste that another reviewer mentioned. I didn't really like the consistency either. The were more cakey rather than chewy.

Crayfish or Shrimp Pasta

I made this for a potluck and it was well liked by all. I used penne instead of angel hair to make it easier to serve. I used shrimp and crab and used 3 cups cream, 3 cups half and half. It takes a long, long, long, time to reduce and turned out really wet. Next time I'll probably just use 1.5 cups cream and 1.5 cups half and half.
