Seafood Enchiladas

With the addition of some seasonings, these were great :) I used green onions as opposed to white... I don't like the taste of white. To both the sauce and the shrimp mixture, I added finely chopped garlic, parsley, and salt & pepper. You really want to beat the "bland?" Try adding 2 TBs of cocktail sauce to both the enchilada and the sauce... I think that's what really made a difference!

Pecan Sandies

I added my own little touch.... an extra teaspon of vanilla, 1/4 tsp of almond extract, and about 1/2 tsp of cinnamon.... everyone loved them.. great recipe, thanks so much!

Honey Walnut Shrimp

I halved the honey because I thought the honey taste was too strong... but otherwise, this is great! The restaraunts here call it Coconut Chicken and I was having a heck of a time finding the recipe. Here it is!!

Cream Cheese, Garlic, and Chive Stuffed Chicken

I used the basic concept, but I used onion & chive cream cheese with minced garlic and other seasonings, rolled with one piece of bacon each way so the cream cheese didn't run out. I sprinkled the top with basil and rosemary, and shredded cheese in the last 5 minutes. My hubby loved it, and I thought it was good, but not quite 5 stars for me.

Baked Macaroni and Cheese

I ended up using both elbows and shells... I had a little of each. I also dabbed a little extra butter on the top. Instead of cheddar cheese, I used a taco blend and added some muenster. I did forget to season the recipe and a little seasoning would have made it even better, but the different cheeses helped. All in all it was pretty much what I was looking for :)

Mayonnaise Biscuits

Interesting. I thought they tasted almost more like a pastry than a biscuit. They were good though, and my husband liked them even though he's not a mayo fan.

Chocolate Mayo Cake

I added about a tablespoon extra of cocoa powder and just a dash of cinnamon and topped with the Fluffy Peanut Butter Frosting recipe...one of the best chocolate cakes I've ever had!

Fluffy Peanut Butter Frosting

I accidentally added too much milk so mine was a little thin, but this frosting is very smooth and tastes great! I also added about a 1/2 tsp of vanilla in with my first tablespoon of milk. Used this on the Chocolate Mayo Cake recipe from this site..yummy!

Perfect Scrambled Eggs

The key to fluffy eggs is to remember NOT to overbeat them. Beat them until they are JUST scrambled. If you beat them too much they will turn out flat. Also, I prefer my eggs without the milk or a very small amount added.

Deep Dish Brownies

These brownies were good; cakey but I prefer a fudgy brownie. Also could have used a little more chocolate flavor. The only thing I did was add a handful of mini marshmallows and sprinkled a cup of peanut butter chips over the top before baking which was a nice addition. Think I'll keep looking for a fudgier brownie.

Best Brownies

I didn't make the frosting, but instead made the "Caramel Frosting VI" from this site, using walnuts instead of pecans..... I normally like fudgier brownies but with the caramel frosting these were AWESOME!

Irish Cream Chocolate Cheesecake

I made a couple changes: first of all I substituted the irish creme with vanilla syrup and added about a teaspoon of vanilla extract and a teaspoon of almond extract. I mixed all the ingredients except for the cocoa powder, divided the batter, added half the amount of cocoa to one of the batter and then poured that in the pan and poured the vanilla over it to make a layered cake. Hubby loved the vanilla layer but thought the chocolate was so-so, as to where I loved them both. I think next time I will cut the flour though to make it a little creamier.

Crazy Crust Pizza Dough

Very good! I added garlic and onion powder and little extra flour to the crust as well. I used this crust last night to make a home-made chicken alfredo pizza. I baked the crust for about 12 minutes, then topped with alfredo sauce, poached chicken, and a blend of cheeses, then baked for another 15 minutes. I sprinkled grated parmesan cheese and let it sit for a few minutes before putting it on the table. Was a nice change from the norm :)

Shepherd's Pie

I made a couple changes and hubby and I both loved it :) First of all, since there is just us I cut the recipe in half and used an 8x8 pan. I used cream of broccoli soup & frozen veggies as opposed to canned. After adding the meat and veggies mixture to the pan, I dotted that with about a tablespoon of the butter, added the potatoes, then dabbed the rest of the butter. Then, I baked it for 25 min., pulled it out and topped it with cheese then baked it another 10 minutes and served with cornbread. Was a good dish for a chilly fall evening :)
