Baklava
Very easy and everyone loved it! I asked a greek family member about making baklava before had, and she said just to be sure to use lots of butter. I melted a good cup and a half extra and just kept pouring it on to keep the dough moist. I also added a bit of ginger to the nuts and a bit of lemon juice to the honey sugar sauce.

Pineapple Upside-Down Cake III
I made this for a friends birthday as a healthier birthday cake, and everyone loved it, and could have cared less about missing the sugary frosting and icing! I sived a small bit of brown sugar on the bottom of the pan to give it a more "crystally" appearence and added some green and red marichino charries, quartered into the mix to give it a bit more color.

Cream Cheese Frosting I
I added 2 tsp Vanilla and 1 tsp almond extract for extra flavor.
