I am wife, mommmy to two adorable kiddos ( a boy age 9 & a girl age 14), I also keep my niece who is four full time and nephew who is 11 months. I will be substitute teaching this fall. I enjoy cooking & eating, being with my family, entertaining, watching tv & movies - love court shows & reality shows, seeing new places, relaxing, etc.

My favorite family cooking traditions
I really don't have many of those. When I was growing up my dad yelled at me while I cooked gravy - now I can make a fantastic gravy that makes even my mother in law envious...does that count?? Lol
My cooking triumphs
I think that just learning on my own is a triumph in itself. I have mastered that art of cooking things that are simple and making them taste like I spent all day on them!! I love to search and find new quick dishes!
My cooking tragedies
Once I tried to make stew...not a good experience for any of us. Not even the dog would eat it...'nuff said. :)

Easy Peach Cobbler
This recipe came out bad, I followed the directions exactly with the exception of using a much larger jar of peaches. The crust was just awful. It was a weird texture and had no flavor whatsoever. I took it to my neighbor's for dinner and was very embarrassed and disappointed. NO ONE liked it in the least.

Frosty Pineapple Salad
This was WAY EASY AND VERY DELISH! Everyone was asking for the recipe at the teachers luncheon! I think you could easily add a different fruit (fruit cocktail maybe) or add more fruit to the original such as mandarin oranges or peaches. This was really good stuff. I added a packet of instant coconut pudding as another reviewer suggested and it was just - amazing. Simple and yummy! An all ages pleaser!

Fluffy Pancakes
I made these tonight for dinner using buttermilk and whole wheat flour. They were so fluffy and very delicious. I have a family of four with a couple big eaters so I had to double the recipe. Next time, I will triple it to have more to stock in the fridge. They are SO easy! If you are new to pancake making you will find this recipe pretty easy. I did sub oil for shortening. I can't tell if it were to make a difference b/c I have only made them this way. I didn't have any shortening. I never use that stuff! I also added a drop or two of vanilla because that's how my dad always made them. The batter was thick because of the buttermilk. I used a little extra buttermilk and then thinned the batter a TINY bit using a couple teaspoons of water. The buttermilk gives them a more homestyle, old fashioned flavor! These were fabulous!
