Salsa Chicken
I make this all the time, most times in the crockpot because it's so easy! I throw the chicken breasts in the crockpot, top with taco seasoning, and then put in the salsa (I really like using Black Bean & Corn salsa), and sometimes I put in a can of cream of chicken soup to make it more creamy. I have added frozen corn in when using the regular salsa. I usually serve over white rice. So good and easy!

Cream Cheese Cookies I
I LOVE these. They are so easy to make and they are delicious. I use 8oz cream cheese, 1 tsp vanilla extract (or almond if I want something different), and 2 cups of flour. After they are somewhat cooled I sprinkle with powdered sugar. They taste even better cold! :)

The Best Rolled Sugar Cookies
These are really good. I also increased sugar by one extra cup and added an extra tsp of almond extract (I ran out of vanilla!) I refrigerated overnight, and rolled directly onto a sheet of parchment paper sprinkled with powdered sugar. This is the best tip! To keep the paper from moving around while rolling, set a kitchen towel underneath! Remember to take the towel out before using the cookie cutters so that you have a hard surface to get a good cut. These did spread a lot, but they taste great even without icing. :) Thanks!
