Shrimp Tetrazzini
Was going to make shrimp scampi, a family favorite, but decided to make this instead. This was very good, but I made a few changes: added olive oil and butter to the pan, sauteed the onions for about 7-8 minutes, then added fresh sliced garlic, sauteed it for another 5-6 minutes, added the mushrooms and continued cooking the mix until the mushroom were golden brown using low heat, then threw in shrimp and scallops until done. Made the sauce but used white wine, 1 cup of heavy cream and 1 cup of milk with the remaining ingredients, added the shrimp/scallop/mushroom mixture back into the sauce and finished it with fresh parsley and tarragon. Instead of finishing it in the oven, I tossed in the pasta and served it. Turned out great.

Norwegian Waffles
If we could rate this 6 stars, we would! I don't like waffles and I usually make them for our daughter, so I decided to try a new one this morning. Before I was done making the second batch, she had already finished her plate! My husband said these were the best waffles he's ever had. These are so delicious I cannot rave about them enough. We will continue to use the recipe but will throw in bananas, blueberries, etc. if we want to. I had to make a couple of changes - used 1/2 & 1/2 as well as milk, oil instead of shortening because but it still turned out great. Thanks so much for sharing!!!

Bread Pudding II
I changed this up a bit and it was delicious! I cubed 2 small apples and sauted in butter until soft. Used 1/4 cup of melted butter and poured over the bread. Mixed 1/3 cup brown sugar, 1/3 cup sugar, 1 cup evaporated milk and 1 1/2 cups of milk (didn't have cream), nutmeg, cinamon, raisins, chopped walnuts, added the cooled apples and the rest of the ingridients, poured over the bread, mixed well and baked. The house smelled delicious and we ate it with Haagen Daz vanilla ice cream!!!!
