Simple Salisbury Steaks

This was pretty good. My husband REALLY liked it. My 12 year old didn't like it so much due to the mushrooms and onions. I'm giving the recipe 4 stars because really, mushroom soup does NOT equal gravy to me. Perhaps the addition of some DARKER soup, (onion?) or maybe a package of french onion soup mix added to the mushroom soup would have made it better. I DID add french onion soup to the meat which gave it a great flavor... maybe I should have used only half the packet and the other half in the gravy....

Baked Whole Cauliflower

Pretty darn good. I separated the cauliflower into florets, microwaved them for 8 minutes, and then coated w/the butter/breadcrumb mixture and cooked in the oven for about 15 minutes.

Bread Pudding II

This was good. My husband says it's the best bread pudding i've made. We found it to be not TOO sweet. I didn't use raisins because I didn't have any, and I used another reviewers suggestion of adding a 1/4 cup of brown sugar (which I wouldn't have added if I used raisins). This cooked about an hour which was perfect (we are at a high elevation). Super easy recipe which turned out delicious!

Sloppy Joe Sandwiches

This was really really really good. I doubled the recipe for 3 people but I should have tripled it, thats how good it was! I added a splash of vinegar and thats the only change I made to the recipe. Served on bolillo rolls YUM.

Cranberry Sauce

I have always used the recipe on the back of the cranberries bag, which is simply water and sugar. This with the OJ makes it just a bit more special, and I'll use this recipe from now on!

Debdoozie's Blue Ribbon Chili

This was great. I used Pace HOT picante which got out of my hands so instead of 8 oz it was more like 16 oz that got in the pot. The taste was outstanding BUT the chili was SO HOT so next time I'll use Pace medium picante. I also used chili beans instead of kidneys, which is my personal preference. The taste was wonderful and I'll probably use this recipe as my main chili recipe from now on. Super easy to make.

Awesome and Easy Creamy Corn Casserole

Wow this was really yummy! This is NOT like cornbread, more like a souffle consistency. I made this as a side with chili thinking it had more of a cornbread texture but it was delicious scooped on top of the chili. I'll make again for sure ... it was so delicious ... but not instead of cornbread. SO GOOD!

Sweet Potato and Pineapple Casserole

I found the pumpkin-pie type spices overwhelming. Ticked me off, too, because my mother WARNED me not to make this will all the spices but I disregarded her suggestions and was very disappointed. It barely got eaten at Thanksgiving.

Swiss Chicken Casserole II

Without reading everyone's reviews I made this exactly as written. I found many things that could be changed to make this a better dish; I would pound my breasts to make them a bit thinner, I would remove the breasts from the pan after cooking and wisk the juices and the soup together, and I would DEFINITELY add enough stuffing mix so that the ENTIRE top of the pan/chicken would be covered with chicken. These simply was not enough stuffing. Also perhaps adding some veggies (broccoli comes to mind) . All in all I don't think I'll make this again, and certainly not as written.

Collard-Kielbasa Soup

I made this almost exactly as written, leaving out only the bacon (but I did use bacon fat to cook the onions, etc.). This soup was really delicious but it cooked FAR too long and the potatoes and beans were mushy. I will make this again cooking it probably half the time. Other than that, this was yummy!

Pasta Pomodoro

I had problems with this receipe as is. I doubled the sauce/tomato mixture but left the pasta the same. Problem was, it was a bit bland and I could definitely see where wine might have added the "something missing." Also I'd try something other than angel hair if I made it again (just a personal preference). Husband wasn't crazy about it ... probably won't try again.

Chicken And Apple Curry

WOW! This was SO good. I used one can of coconut milk and one can of broth. I used 1 1/2 TBS of curry and could have definitely used more (I ran out). Used 6 breasts which we cut into bite-sized pieces. The proportion of chicken/sauce was just right. Served with mashed potatoes (b/c we had eaten rice the two nights before I served this) and it ROCKED! I will serve w/mashed again for sure. Served with broccoli on side. Wonderful easy dish.

Fried Rice Restaurant Style

Apparently i'm in the minority here.... I don't see anything special about this fried rice. There aren't even spices in it, except for the soy sauce. Also, BEWARE.... this makes MASSIVE amounts. I could have halved this receipe and still had left over.

Homemade Wonton Soup

Pretty good. Cooked wontons separately and then added to soup. Add at very end otherwise they'll get overcooked. Even better, keep on side and let individuals add to their own broth. Mine got totally overcooked in the hot broth. The 30 min. prep time is a joke! It took FOREVER (for two of us!) to make 60 wontons! Also, wonton meat mixture could have used more spices as it was quite bland .. to the point that my husband complained. Thats why 4 stars instead of 5.

Todd's Famous Blueberry Pancakes

These were okay. I didn't have an hour to wait and so I didn't. These were SO fat and weirdly lacking in taste. Maybe some more sugar? Maybe some vanilla? Something seemed to be missing, even with the blueberries. The kids enjoyed them tho, which is why I'm giving 4 stars, not 3.

Tater Tot Casserole II

I had my 12 year old put this meal together and put it in the oven before we got home. The outcome was delicious, however not the healthiest meal in the world! Next time (and there will be a next time) I'll add 1/4C of milk to the soup/sour cream (to start) because the soup/sour cream mixture was quite thick and, once it started cooling down on the table, it started to congeal. My husband LOVED this which is weird b/c he doesn't "love" any food and in particular he's not much of a sour cream fan (he had no idea there was sour cream in this dish). I served w/a fried swiss chard & spinach mixture and I'm glad I did because all the richness needed a counterpoint. A salad would be good to serve with this also... this would also be a good side (except it makes a LOT) to a (healthy) meal. Very good!

Easy Bok Choy

I made this with one head of regular (not baby) bok choy and two cloves crushed garlic. It really wasn't enough so I added a bunch of spinich. It was SO simple and delicious, with and without the spinich. Will definitely make again.

Chinese Cabbage Salad I

I made this with two minor changes: I used slivered almonds instead of cashews (I toasted them) and I added the ramen soup chicken flavor pack to the dressing. I don't really think the chicken flavoring made much of a difference so next time I'll try without. This was GREAT and super fast and easy to make... we will without a doubt make it again and again.

Summer Grilled Cabbage

Pretty darn good. Not earth shattering, but worth trying a second time for sure. I had 2 little cabbages; one I quartered and one I cut in eights. I I should have quartered them both.
