Fish in Foil
I used Swai (which is a form of catfish) didn't have lemon so I used lemon pepper seasoning, garlic powder and jalapenos and cooked for 20 minutes. My hubby said it was awesome! Served with wild rice.

Mini Meatloaves
Excellent meatloaf. I changed nothing in this recipe and won't add anything different when I make this again and again.

Broccoli Chicken Roli
I made this years ago when I had a Pampered Chef party and forgot how good it was. Glad I came across this recipe again. I changed the servings to 10 and still had too much filling, I think 1/2 would probably be perfect.
