About this Cook
I'm a vegetarian and aspiring vegan. Mostly for health reasons, but the ethical issues are important, too. Read "Eat to Live" by Dr. Joel Fuhrman or either of the books by John Robbins (son of cofounder of Baskin and Robbins). All very enlightening books.
My favorite things to cook
I love to try new things and explore healthier alternatives to family favorites.
My favorite family cooking traditions
I love it when everyone pitches in toghether to fix a meal.
My cooking triumphs
I consider it a victory whenever I make something that appeals to everyone in my family: my health-nut hubby, my carniverous, veggie-phobic teenage son, and my fickle 5 year old step daughter. :-)
My cooking tragedies
Potato Tacos. A recipe I found here with rave reviews. I must have done something wrong. they turned out terrible. My family still teases me about them on a regular basis.

Vegan Fajitas
Yum, yum, yummy, yum, yum! This was very good. I did make a few changes per other reviews and personal preference. I subbed half of the vinegar for lemon juice and didn't add quite the full amount. Even then, I think next time I would cut down a little more. I also added a bag of frozen shoe string fries to the veggies (I didn't marinate them) and left out the beans and corn (because I made a side of beans). I love potatoes in my veggie fajitas. I had them that way at a local restaurant and was hooked. It makes them so much more satisfying! Thanks for the recipe!

Southwest Corn Salad
This was delicious! I omitted the green chiles as I didn't have any on hand and added avocado soaked in lime juice and some diced english cucumber as suggested in other reviews. I also used radiatore pasta as it holds the sauce better. Thanks for sharing!

Slow Cooker Baked Beans
Very good! Thanks for sharing. I did make a few alterations. I made a vegetarian version, omitting the ham hocks. I also added a can of crushed pineapple, used 1/2 molasses and 1/2 maple syrup, a bit of garlic powder, and probably used a bit less ketchup and mustard than called for. I will definitely make this again!
