Fruited Curry Chicken Salad

I hosted a baby shower and made this recipe. Served it on small squares of wheat pita with a little bit of crisp lettuce... it was a huge hit. I thought I added too much curry but everyone else at the shower just raved over the taste. I thought it was good too. They must have really loved it, there was some left over and people took some home. I was very pleased and will make again!!

Cheesy Potato and Corn Chowder

Oh my gosh this is so good! I thought the combination of chilies and gravy mix would be odd. Oh but to the contrary!! Everyone in my house gives this one a big 5 stars. It was exactly what I was looking for, tastes just like (maybe better) than the corn chowder from the sandwich shop.

Smothered Green Beans

Very good recipe, I'm not a huge green bean fan but I really liked these. I even got my children to eat some. Its a keeper. The only slight change I made I added fresh mushrooms with the onions, just because I had them and had to do something with them. They didn't change the taste of the beans, I don't believe and they tasted really good. I can't think of anything that wouldn't be good saute in bacon fat, onion and garlic.

Banana Pudding IV

Very nice recipe, easy, creamy, rich. I like the fact that it is no bake, the bananas didn't turn that yucky grey color they sometimes do when heated. This is a keeper, I'm taking it to my family reunion this weekend, I am sure it will be a hit. I do think next time I'll use neufatel cheese instead of cream cheese. I think it might cut down on the richness a bit. It set up beautifully, great presentation! Even better the next day.

Sloppy Joes II

So so good, I added more brown sugar than called for and mine were a tiny bit sweet,for me. But I sill loved them and so did my whole family. I can't wait to make them again. Great recipe!!

Stars and Stripes Grand Finale Cake

I also made this recipe layering the cake and whipped topping, except for the fruit I used store bought rasberries, thawed and mixed with orange juice. Then mixed a pack of gel. The tartness of the orange juice with the sweet of the cake was soo good. You may not need to use the gel unless you don't plan on serving right away. I found the weight of the mold itself held the cake together just fine as long as it was served right away.

Raised Yeast Waffles

Really, really good. I am a mix kinda girl too so this seemed a bit more work that I would regularly do... until I tried them. I added vanilla flavoring and a bit more sugar (maybe 2 Tbsp)and let the mix rest and rise for the full 45 mins. Light and chrispy. I will make this one again but will take advise from another reviewer and make it the night before. Great recipe!

Big Soft Ginger Cookies

My only advise on making this recipe is, don't make it, unless you are ready to make another batch after you devour the first. These are so good. These will have to be at the top of the best cookies I have ever made list. Worth every star and then some!!

Magic Mango Bread

OK, I was going to make this WONDERFUL sounding recipe and prove all those nay sayer wrong. Well, it was so less than wonderful. Now I will admit I did not add the coconut, nuts or rasins but added more mango that called for, also added lemon juice, a little ginger and a pinch of cardamon. It really tasted like a really good peach cobbler. Not at all what I expected. It was very moist. I don't think I will be making it again this way, I may try it without the mango all together and replace them with cranberries and walnuts.

Chocolate Cherry Chip Cake

I loved this cake, I'm not a big chocolate lover but this one I loved! I want to make these into cupcakes for my daughter's birthday. Mine did stick very bad, I didn't let it cool long enough before trying to turn it out and it made a mess. But what a delicious mess it was!!!

Linguine and Clam Sauce

Oh my gosh!!! So very good!! I also omitted the oil and butter, added 1 cup of white wine and some chopped red pepper from a jar. I've never had pasta with clam sauce before and boy have I been missing out. The only change I might make is next time I'll add more clams.

White Bean Chicken Chili

Really good! All I had on hand was a can of crushed tomatos and some medium salsa. I had a pack of 6 frozen chicken tenders, I fried them (using very little oil) chopped them in little pieces and added some left over white beans we had made a day or so before. Which was way more than the recipe called for, if I had to guess I would say it was more like 2 or 3 cans. I used the exact spices. It turned out great. The corn added great texture, a nice crunch. I made a creole type cornbread to serve with, and topped with fat free sour cream... YUMMMMMM.

Buttermilk Syrup

This is wonderful! I didn't have any corn syrup so I used 1tbsp of corn starch. We try to eat low fat so I only had skim milk on hand. I added a little lemon juice to the milk and it worked great in place of the buttermilk. Also I didn't have the butter, I used 1tbsp of Smart Balance light spread and added butter flavoring at the end to make sure it had that buttery taste, although, I don't think you really need it it's rich enough. One more subsitute, I used 1/2 cup of dark brown sugar and 1 cup of white sugar. I think I'll cut down on the white sugar next time, really sweet for me but my kids loved it. The extra sweetness, thickness and carmel flavor worked GREAT with whole wheat pancakes, however, which can and extra kick sometimes. I would like to try cooking it a little longer, to thicken it a bit more, and pour over popcorn and pretzels and bake for a few mins. I don't see me ever buying store bought syrup ever again. I'll use this one over and over!

Seven Layer Tortilla Pie

I am only giving this dish one star, although, I feel it would be unfair to make a judgement after my first attempt at making this dish. I don't know if it was my garlic or what, but, to me, the garlic was overwhelming! I will try this one again, however, I will leave out the garlic.

Crustless Spinach Quiche

This is soo good, I perfer the no crust. I used swiss cheese and I think I could have this everyday. I'm going to try it next time with the muenster. This recipe has to be ranked up there with some of my all time favorites. I will make this one over and over --no doubt!!

Low-Fat Potato Soup

Really good, rich, creamy, I did not miss the fat at all. I didn't follow the recipe to a T but I did use the all the ingredients. The only thing that might could have made this soup better would have been bacon... but then it wouldn't be "low fat" and its still GREAT without it.

Friendship Tea

This is a Holiday must have. I cut down on the cloves and added the red hot candies as someone had suggested, and ran it through the food processor until everything was the same consistency...WOW!! That really kicked it up!! I have given this every year at Chirstmas and everyone loves it. It's great anytime! It is also really nice to sip on when you have a sore throat or feeling under the weather. Makes you want to just hug your mug and say...MMMMMMM!
