Garbanzo Tomato Pasta Soup

The broth was bland (I used chicken broth) so I spiced it up with red pepper flakes and fresh rosemary, thyme, oregano and parsley. Also used whole wheat penne. I should have used more garlic. Still, considering its simplicity, pantry ingredients and short prep time, it's a good soup. It'll be good for lunches this week.

Dried Cherry Muffins

Nice little muffins. I love dried cherries and like recipes I can make with things I already have in the house. I used whole wheat flour and cut back the shortening a little, added some almond extract, and since I didn't have buttermilk I used plain yogurt. They turned out well. Some applesauce might be a good addition next time, to make up for using less shortening.

Sour Cream Coffee Cake

Delicious! I followed the recipe exactly, except for adding a layer of diced Granny Smith apples, and some granola to the topping, just because I had some. It was a fantastic apple coffee cake. I'm going to try it again using other fruits. My boyfriend said "This could be the best thing you've ever made!"

Cincinnati Chili I

We really liked this chili. We left out the cloves and substituted cocoa for the square of chocolate, but other than that, followed the recipe and had it "5-way", and then again as chili dogs, with uncured natural beef franks. Good stuff.

Addictive Sweet Potato Burritos

Fresh Strawberry Pie I

This was a good pie. I used a lot more stawberries, and at the bottom, right on top of the crust, spread a layer of cream cheese mixed with cool whip. People are still talking about it months later.

Banana Cake VI

Tomatoed Pork

We made this in the crock pot with two cans of tomatoes and jalapenos instead of the fresh jalapenos, and we really like it. We've already made twice, once to eat in tortillas, and once we shredded the meat and used it for chilaquiles. Yum!

Microwave Caramel Popcorn

Easy and delicious. I salted the popcorn (popped in a little oil on the stove) and added sliced almonds and pecan halves. Made an awesome gift for my co-workers in little bags with bows.

Almond Cookies III

Mmmmm delicious almond cookies. I added the extra almond extract, and then while the butter and sugar were creaming, I poured in about a cup of sliced almonds. A sliver of toasted almond topped each one. Definitely a keeper!

Absolutely Best Brownies

I'm not a huge brownie fan, but I liked these more than most - not too sweet, not too dry, just plain good. Made them for a birthday party, served them warm with vanilla ice cream and they disappeared.

Johnny's Biscuits

I had my doubts about these biscuits because of the sugar, and the final step of dipping them in flour. I've always made rolled biscuits, not drop. But these were delicious biscuits! Great recipe! I had to use margarine because I didn't have either shortening or butter, but they were still great. My new biscuit recipe!

Greek Butter Cookies

This recipe has been in my family for many years! We're not Greek and we had no idea this was a Greek recipe. We chill the dough in balls and roll it out thin, then cut it into shapes with cookie cutters and decorate with Christmas decorations. The best sugar cookies ever.

Bulgur Chickpea Salad

This is basically tabbouli with grated carrots and chickpeas. I like it better with olive oil in the dressing, and you can use a food processor to shred the parsley and green onions together, with a clove of fresh garlic, then grate the carrots. Delicious.

Baked Dijon Salmon

I liked this, but it was really rich. I wonder how it would be with half olive oil, half butter? I left out the nuts because I didn't feel like chopping them, and I'm glad I did because that would have made it even richer.

Blueberry Boy Bait

To those in "blueberries at the bottom" club: more than likely you're not beating the flour/milk/egg mixture long enough. If you use an electric mixer for 3 minutes like the recipe says the mixture will be thick enough the berries won't sink. If it isn't, keep mixing. This is soooo yummy, I could eat the whole pan.

Apple Crumble Pie

Good, but recipe needs to mention that the butter should be softened before cutting into the flour mixture. Cold butter doesn't make streusel. I put some oatmeal into the flour, next time I'll put more.
