Grilled Bacon Jalapeno Wraps
These were wonderful. I made sure the edges met exactly after I filled them with cheese and before I wrapped them with bacon. Used a fairly meaty bacon that was thinly sliced. Used jalapenos that were about 2-3 inches long. They did not ooze and did not burn. They were not "hot" until you reached near the stem. I would not bother freezing as mine didn't ooze. 10 stars!

Portuguese Pork with Red Peppers
What a wonderful dish! I don't have a large mortar and pestle so used an mini chop. It did not break all the peppercorns so I did crush a few with my small mortar and pestle. Quite a few of the peppercorns remained whole. Although I thought it would be too peppery, it was such a hit at our house that it made the DEFINITELY MAKE AGAIN, AND SOON! list.

Spinach and Artichoke Au Gratin
Decided to make this recipe for an appetizer. Did misread the recipe and used 3 8-ounce packages of cream cheese so had to add more milk and make another pan. It still turned out fantastically!!! One pan cut nicely into squares, the other worked better to spoon onto crackers.
