So I had one and thought okay this is good, liked the coffee taste at the end. Then thought what the heck let me "down" another one, and just one more before guest get here.... the rest is history! THANK YOU for an evening I was told was a blast.

Pesto Pasta with Chicken

I enjoyed this recipe. I tweek it a bit. I added fresh mushrooms and tomatoes. Instead of combining it all at once I did plate by plate. Some people liked mushrooms others didn't..that type of thing. Also added the extra's with the chicken and garlic so the flavors would fuse and chicken not dry out! Next time I'm going to try it with a white wine instead of oil and maybe some shrimp!!

Cajun Red Snapper

This was good. I needed something quick and it was. Two things I recommended, use a non-stick skillet and double/maybe even triple the recipe to get a nice even coats on the snapper.

ABSOLUTELY FABULOUS!! Was looking for a quick recipe and stumbled onto this one!! I did add 1/4 cup broth and not so much pepper flakes, just enough to give it a kick! LOVE IT!!

Cheesy Chicken Quesadillas

Had leftover grilled chicken breast (Asian grilled chicken) so I wanted to do something different with it! Found this recipe and everyone loved it! I did add some 1/2c black beans and 1/2c corn to the salsa. I also damped the outside part of the tortilla so it would be crunchy. Cooked on heated them on the electrical skillet for easy access.No more leftovers!

Brown Sugar Meatloaf

My family enoyed it!! I'm glad I read the reviews. I only used 1/2c of brown sugar, added some garlic, used the union soup mix. Since I used the saltine crackers I only used 1/2tsp of salt. Added some worcestire sauce to the brown sugar mix. Also did the bread on the bottom of the pan!! Really soaked up the grease!! Is in my box for keeps!

Mexican Chicken I

Who would have thought adding additional spices to already made salsa would turn out so great! I didn't have chicken breast so I used thighs & drumsticks and added a little more garlic. I only cooked it for 1hr took of the lid added some cheese and baked (top off) for another 10min. Came out nice and moist!! This one is a keeper.

This tasted just like the make it on the island! I just added some green olives and cut up slices of bacon and chunks of ham! Everyone LOVED IT!

Vegetable Medley II

Bev's Orange Chicken

This was GREAT!! I was looking for something new to do with thighs and this was it! I pressed 3-4 garlic cloves with the mix. I removed the chicken when done and added 1tbls of cornstarch and 1 Splenda packet and it was an excellent gravy! This one is a keeper.

Zucchini Saute

Excellent!! I just loved it! I just started Atkins and was looking for something to add flare to some vegies and I FOUND THIS!! LOVE IT! I didn't have a tomato and I pressed the garlic instead. This is a keeper. Thanks Denyse
