The Radford Family
About this Cook
My family serves as missionaries in Senegal, West Africa. Two of our kids were born here and this is HOME to us all!
My favorite things to cook
I love to cook family dishes and desserts that are homey and comforting. But I also LOVE to try new things and usually do so when we are having guests.
My favorite family cooking traditions
homemade bread; homemade strawberry, blueberry, squashberry, red current and rhubarb jams; banana breads and tea biscuits, good basic home cooking!
My cooking triumphs
finding recipes for special dishes we have eaten in restaurants and having them turn out just right!
My cooking tragedies
well, there were this "wood cookies" my kids say I made one time...and I am getting famous for "mom's surprise" suppers which are usually good, just un-nameable!

Vegan Red Lentil Soup
I LOVE this soup. No one else in my family was very crazy about it UNTIL I made it a little thicker and served it over rice. Now they all love it! Excellent Thai flavours. It is one of the foods I crave, late at night...when everyone is asleep! :-)

Marshmallow Log
This is what my mom made every year for my birthday parties (but without the nuts and cheeries!). I have a bag of coloured marshmallows and decided to make some for my little girl but couldn't find the recipe. Thanks for posting it!

Green Beans with Bread Crumbs
We make these regularly and love them. We love parmesan so usually add extra. I think a combination of 1/2 olive oil and 1/2 melted butter helps for people who aren't crazy about the olive flavour. Very unusual, but my guests always love it!
