Onion Rice

We adjusted this by using yellow (hot) onions, quadrupled the recipe and used my rice cooker. But in the rice cooker, 2:1 is too wet for us. I will reduce to 1.5:1 and maybe even down to 1:1. This will be a staple for us.

Chocolate Cream Pie I

I made an oreo crust for the pie and it was good. I didn't think it was really a dark chocolate like many others did, but a nice chocolate pie. I had issues with lumps, but no one could tell because I covered it in my homemade whipped cream, then added some chocolate curls on top.

Cranberry Sauce

This was great. I couldn't get anyone who doesn't like cranberries would try it, but those of us who like cranberries, loved it. Be careful, it will boil over easily and makes a very pretty mess! It's rare not to tweak a recipe - but this one is just right.

Spiced Hot Chocolate

I looked repeately at the recipe to see what I did wrong. The only change I made was 1% milk instead of skim. It came out like lightly chocolate flavored water. In an attempt to salvage - I doubled the cocoa powder and sugar and it was slightly better. Then I added a couple sprinkles salt, again a little better but not worthwhile. Then I added about 1/4 heavy cream. An improvement but not good. Then ended up adding 4 squares of Lindt Dark Chili chocolate bar. With the changes, I would give it a 2 or 3. Definitely won't make this again. I recommend trying a smaller version before you go with the whole recipe. The grainy texture from the spices was not pleasant either. I'll keep looking.

Buttery Soft Pretzels

5 cups flour is too much, but otherwise, I did everything else as noted and it was great. Well, actually, I used 2 cups water with 2 Tbsp soda in an 8x8 pan for dipping. I don't like throwing away so much solution. The first batch was gone faster than I could butter and top. I used cinnamon/ sugar and onion/garlic. I'm going to try jalapino next. I do bake at 450 for 8 on the top rack. Bottoms and tops are nicely brown.

Seven Layer Taco Dip

I made a double batch because I knew a dish with one can of refried beans wasn't enough. It would have been just about right! Maybe leaving a few wanting more. I used guac vs lettuce. Put part together the night before, and finished it up in the morning. The only problem I ran into was the salsa was too watery and it flooded my refrigerator when it ran off the plate. I will strain my salsa next time. Yummm

Cinnamon Ice Cream

I didn't care for it at all. I love rich and creamy and really sweet - but this was way overload. Couldn't even eat a second spoonful. My kids liked it, but I made a double batch and threw the extra away. The cinnamon (and I LOVE cinnamon) was way to strong also. And I actually measured everything this time. Won't make this again!

Best Ever Chocolate Fudge Layer Cake

This is an awesome cake. I do cheat because of the effort... I add 1 up of mini chocolate chips rather than chopping up the squares. Everything else as is. It was originally for my husband, but by the 2nd or 3rd one, it's now my cake. I call it Death By Chocolate. Truly one reason to keep living! 10/18/09 I tried using a bundt pan and it looks great!

Grandma's Egg Custard Pie

I also ended up with sweet, scrambled eggs. I love a sweet custard, and this is too much for me - unheard of before this. I did some research to find out why it separated, and I found where this happens when it is cooked at too high of a heat. When I looked in the oven, it's the first time I ever saw a custard boil! I will go back to Mom's and try at a lower heat... Maybe someday my custard will turn out!

Quick and Easy Pancit

Now this one tastes like should! OK, I also added some more soy, but it took me back to my visit to the Philippeans. I used chicken and shrimp, Thai rice noodles and it was awesome! It almost makes up for the nasty adobo recipe!

Adobo Chicken with Ginger

My husband and I love adobo, even tho it has been years since either of us have eaten it. I was so excited about this recipe - but our double batch is going in the garbage. The vinegar is too overpowering, and my husband likes vinegar! He's trying it with sour cream (yuck) because we hate throwing away food. I'll keep looking!

Bread Pudding II

My husband says this is perfect. I like mine a little more custardy, but this is great. I made no changes and I like not having to heat the milk, etc first. I had fresh bread so I dried it out in the oven and it worked great. Thanks!

Peppy's Pita Bread

This is a wonderful, easy pocket bread recipe. I had made one many years ago and it was difficult, time consuming and didn't turn out. This was VERY easy, turned out perfect. The only thing I will do on my next batch (3rd) will be to decrease the water. I had to use quite a bit of flour to roll out the pockets because it was quite moist and sticky. I also weighed rather than rolled and cut since I can't get the portions right. With the above recipe, each pocket should weigh right about 3 ounces. Enjoy! They puff beautifully and are fun to watch in the oven.

Acorn Squash Soup

OK - I have to admit, I rolled my eyes at all the hoopla - but boy was I wrong. Absolutely amazing! I didn't add the bacon but I think it would go very, very well with the soup. I only had 1/2 the evap milk I needed so I sub heavy cream and skim. A bit rich with that, but OMG, not looking for another squash recipe. This is the one. I caught my husband sneaking in to the kitchen late last night....

Spicy Rapid Roast Chicken

We couldn't find any 3# chickens, so I did 2 5#. I tripled the seasonings and that worked well, added and extra 30 minutes and it was perfect. My husband couldn't quit exclaiming over the appearance...truly a beautiful dish, and it tastes just as good as it looks! Thank you!

Lebanese-Style Red Lentil Soup

Even after making this a no-fuss soup, it is still very good. I had to add about 3 cups water to keep it from drying out. I also used beef broth since I didn't have chicken. It still tastes very good, but chicken would be better. I also used dehydrated onion, minced garlic from the store, dehydrated cilantro and lemon juice. These all worked well and I didn't have to wait until I could get to the store! I also messed up and put the cilantro in with the other ingredients. If this soup can still be this good, imagine what it would be like if I made it right!!
