Vegetarian Korma

This was great! I had planned on using coconut milk instead of cream but had none in the cupboard at the crucial moment, so added some yoghurt & milk in desperation & it was still tasty. I added some garam masala, which is a must & a little turmeric & cardamon. My potatoes took a lot longer to cook through than stated.

Hot Fudge Sauce II

Fantastic fudgey gooey yum. I used it in an ice cream cake as the top layer & it was perfect - remaining a little soft even through freezing.

Hummingbird Cake II

I thought this would be a nice change from banana bread/cake - I like the idea of the pineapple... but it massively lacked in flavour to me. The only thing that saved it was the cream cheese frosting. I'll stick to my banana bread thanks...

Spinach Bread

This recipe is great for getting some greens in to my toddler, and yummy. Whenever I bake it in my bread machine it totally sinks in the middle. So now I set it to the dough cycle & make little rolls (bake 12 mins @ 350) which are great for freezing.

Parmesan Tomatoes

I was surprised how yummy this simple recipe was when I used it on some overly ripe tomatoes. I added some olive oil & left out the brown mustard (I only had dijon on hand). Next time I would halve the amount of mayo used - was just a little too strong. Thick slices worked well - it didn't end up too watery for me.

Spaghetti Sauce II

Great basic marinara recipe - simmering for that long really changes the flavour. I left out the onion & only put about 3/4 of a can of tomato paste - it just seemed too much too thick to put 2 cans in. Will definitely make a double batch next time & freeze.

Addictive Sweet Potato Burritos

I admit I was skeptical - mustard & soy sauce in burritos?! But I followed the recipe exactly & just LOVED the flavour of these. Definitely serve with sour cream (bit of salsa). I was hoping my husband who doesn't really like sweet potato would be won over... although he ate them, he did say they were far too sweet-potatoey for him, bummer!

Vegetable Cornish Pasties

Great flavour - I got lazy on the following... I used ready made frozen puff pastry. I also left out the mushrooms & cheese (vegies alone give enough flavour for me). I used a food processor to grate all the vegetables together, making prep a breeze. Perfect amount for four pasties THANKS.

Sweet Potato Potato Salad

I didn't have any eggs on hand & this salad was still great - with eggs I'm sure even better! I found it easier to largely cube the potatoes before boiling, then they only needed twenty minutes cooking time & were all set to toss in the mayo mix.

Sesame Udon Noodles

I used the recipe for the sauce, but thats all. I threw completely different vegetables in the wok to cook, then the sauce, then cooked (dried packet) udon noodles. The sauce flavor was fantastic - we ate this dish on its own as a meal.

Imitation Meatloaf

Delicious! I was worried about it being dry as reviews mentioned so I used a whole cup of lentils, less breadcrumbs - maybe one cup (I only had Italian) and more tomatoes. It was really really tasty. I did have a disaster when trying to get it out of the pan though oops - don't know the trick there, maybe line the pan? Mine took 1.5 hours to cook properly.

Vegan Split Pea Soup I

I love it - yummy hearty pea soup! I soaked the peas overnight and only cooked them for about half an hour before adding veges. Does need more water/stock. The way the peas & potatoes naturally break down makes for a fantastic consistency without pureeing. Just the vegetarian recipe I was looking for thanks.
