Kerry's Beany Salad

I used half the olive oil, double the garlic and vinegar (next time, would do a little less vinegar). Also used a scant 1/4 teaspoon cayenne instead of the crushed red pepper. This had excellent flavor and a nice combination of textures. Very healthy, too!

Marinade for Chicken

Made 1/2 a recipe - enough to marinate 8 large boneless, skinless breasts. They are so moist and so tender. This is our new "standby" way to make grilled chicken!

Chili I

Very good. I cooked 5 hours in the slow cooker on low the night before, then reheated in the slow cooker for 3 hours on low the next day. You could slightly detect the beer flavor, but overall had excellent flavor. I used 1 jalapeno pepper instead of the 4 hot peppers recommended. Flavorful, but not hot. 3 cans of kidney beans seemed perfect. Awesome texture/thickness. Also used 1/4 cup brown sugar based on other reviews.

Seven Layer Dip II

Very tasty and well received at our Super Bowl Party. Did need to add 2 extra avocados as the cilantro was overpowering. Also thought the taco seasoning was a bit strong in the sour cream layer, but I did make my own (Taco Seasoning I found on this site) so it may be more "potent" than the store bought kind. So I doubled the sour cream, too. I layered it in a 11x7 glass dish and it filled it perfectly.

Marinara Sauce III

Awesome recipe. I let mine simmer about 4 hours. Did add some V8 occasionally throughout the cooking period as the liquid kept evaporating. Great flavor and texture. NOTE: Very oily as written. I decreased the olive oil by half.
