Cajun Seafood Pasta
This is a very flavorful sauce. Although I toned down the pepper, and decreased the amount of green onion and parsley, this is definitely being added to my list of favorites.

Rich and Creamy Roasted Eggplant Soup
I think I can honestly say that this is the best soup I have ever had! It is now my favorite! All of the flavors blend perfectly, and the goat cheese give it a wonderful smoothness. I garnished mine with sliced green onion tops and paprika.

Braised Collard Greens
A very full-flavored dish--a little salty, but otherwise quite good.
