Eggnog Quick Bread

I added 2 tsp. of oil & used 1 cup Evan Williams Eggnog which can be purchased at most liquor stores during the holidays. Fantastic bread!

Good basic recipe. Rice took atleast 45 minutes on low to cook completely. I also thought it was a little bland, added some taco seasoning to taste.

Chicken Chimi in the Oven

These turned out good. The only changes were I only used 1/4 tsp. cinnamon. You had a vague hint in the background & it really added a depth to the flavor. I also sprinkled shredded cheddar over the top before baking.

Sweet Restaurant Slaw

I used 1/3 cup sugar, that was plenty! Also I omitted the poppy seeds & added 1/2 tsp. course black pepper, 1/2 cup diced red onion, . My husband has requested this one twice now! 5 stars after changes.

Grandma's Chicken Noodle Soup

I used a rotisserie chicken & the juice. 8 cups reduced sodium chicken stock. 1/2 cup frozen peas, 1 cup chopped carrots, added 1/2 tsp. ginger, 1/2 tsp. tyme, 1 tsp. sugar, 1 tbl. parsley, 2 cloves pressed garlic, & salt & pepper to taste. Even better the next day!

Turned out great! I added 1/2 cup sliced almonds. Also used 1/2 cup white sugar & 1/2 cup brown sugar. Wonderful red color, I gave these out for Christmas goodies!

Angel Chicken Pasta

After I made the sauce it just wasn't right, too tangy & harsh. I added 1/2 cup chicken stock & 1/2 cup heavy cream. I used fresh chives & 1/2 tsp. black pepper. These additions mellowed it out nicely.

Italian Breaded Pork Chops

I reduced the bread crumbs, used only 1 egg, added salt & pepper, & cut out the milk. I squeezed a fresh lemon over the top before cooking in cast iron skillet for about 45 minutes. I have made this a dozen times & it always turns out perfect. 5 stars after changes!!

Cowboy Cookies III

I made a few changes, used only 1/2 cup white sugar which is plenty! Used 1 egg & 1 egg white, which makes them chewy. Milk Chocolate chips instead of semi sweet, And added 1/2 cup chopped walnuts. This = PERFECT cookies! :)

This is basically a White Russian with coke added. I've made these for years & this recipe calls for way too much coke. Use only 1/2 the can at most.

Best Ever Banana Bread

I used whole wheat flour & it's so dense & good! Also didn't have buttermilk, regular milk works fine. 1 cup of sugar is plenty. Added 1 Tbl. brown sugar & 1/2 cup of applesauce which helps make it very moist. Use the ripest bananas you can, it really adds the flavor! This bread freezes wonderful for several months.

Pineapple Upside-Down Cake VII

This turned out really good! I cut the sugar to 1 cup & used yellow cake mix. Also used 1 cup of the pineapple juice instead of water in the cake mix. This made a sweet, very moist cake. Next time I will use crushed pineapple instead.

Apple Cinnamon Oatmeal Bread

The only change I made was adding a can of cooked spiced apples, drain off the excess liquid. I made small individual loaves to give away to friends. Everyone loved this bread. I wasn't that impressed though.
