I made two of these pies at once. The first one I forgot to simmer the sugar mixture, AND forgot the water, but the pie still turned out delicous!!! The second time I followed the recipe almost, just shook the apples in a bit of cinnamon and sugar (as previously suggested) and tossed them in the sugar mixture before baking and brushed the lattice top with the rest of the mixture. It turned out ALMOST as good as the first, I found it just a bit too sweet with the extra sugar on the apples.
You can't go wrong with this recipe, everyone who tried them loved them!
