Golden Sweet Cornbread
The recipe itself is good but I find it too sweet for my taste so I reduce the amount of sugar by half. Otherwise no complaints. Very quick and easy to make.

Slow Cooker Pulled Pork
I live in Australia where we don't have root beer. So, for my modifications I did as follows: Used a pork shoulder roast since it's a cheaper cut of meat and trimmed off much of the skin/fat that would have made the "crackling". Placed in crock pot fat side down and pour a can of Jim Beam & Coke over it (hey, it was all I had in the fridge). Cooked on low for 4 hours and then turned it and cooked for another 4 hours. Removed the pork and pulled it apart on a cutting board. Actually, it just falls apart. Drain all juice before returning pork to crock pot and adding barbeque sauce and let it cook on low for another 45 minutes to an hour. The meat is soooo tender.
