Japanese and southern "feel good" food. Dad was an excellent cook. He passed it down to all 6 kids. We all are very good cooks and love to share recipes and a good meal.

Jiffy Casserole
Very yummy! It reminds me of S.O.S. (us military brats know what that is). I made some changes that really worked out delicious! I cooked 1 large white onion w/ground beef then added 3 dashes of Worschshire sauce, 2 beef boullion cubes,a couple of dashes of season salt and 1/2 cup of water. I mixed the can of soup with a full can of water then I layered as instructed but in a crockpot. I served it with garlic bread. This is a keeper.

Crispy Coconut Chicken Fingers
Very good but you can not get them brown in the oven just like everyone says.. But I had to try it that way first then I decided to fry them. Much better to do that first instead of wasting energy heating the oven up.

Breaded Chicken Fingers
Great recipe! Was a hit at our New Years Party. Chicken was very juicy! I used Panko bread crumbs (japanese)and it was very crunchy. Thanks!
