I am pretty active in the gym and outdoors, and since it is summer all year round in Phoenix, I am outside all the time hiking, and backpacking. My lifestyle demands a lot of calories and protein, without the fat.
My favorite things to cook
I love chicken. I cook it about 80 percent of the time because there is so much you can do with it, and it is so healthy for you. I also enjoy fish, but since I refuse to freeze it, I only can cook it if I buy it the same day.
My favorite family cooking traditions
Every christmas my grandfather and I spend the afternoon in the kitchen making Steak Diane. It is absolutely my favorite and we make it from scratch. The only problem is that by the time we add the sherry, we are both a little tipsy and end up thinking more is better. Oh well, the family is use to it.
My cooking triumphs
My mother (god bless her) is an aweful cook. So when my parents came to visit me a few years ago, I had already realized that pork chops really weren't hockey pucks and that they could be juicy and tender. When I first said I was cooking them for dinner, dad groaned, but after the first bite, he was in for seconds and thirds.

Taco Pie
The kids didn't like it, I couldn't believe it. I thought it was ok, not worthy of 5 stars though. It is ez to make, but not a ton of flavor. I would add some more spice to it, some jalapenos, sweated onion and avocado to give it more flavor.

Spicy Basil Chicken
I think what really makes or breaks this dish is the oyster sauce and the basil you use. I think that sweet basil pairs well with this dish and the brand of oyster sauce I used was Good Luck which I didn't think was the best. I will try another brand next time. I didn't have chili oil so I used vegetable oil which was fine. I used 2 serrano chilies and 1 anaheim. I like spicy and it was plenty spicy enough. I almost threw in some Sriracha and I am glad I didn't. Overall it was really good and I will be making it again.

Lamb Chops with Balsamic Reduction
Excellent! First time my girlfriend had lamb and I am glad I chose this recipe. Have tried the curry one and another since then, this is by far the best.
