Sweet and Sour Sauce II

Well it doesn't get much easier than this! I used crushed pineapple and ketchup as substitutions, and added a dash of soy sauce. Great results. Too sweet for me, so will adjust next time. Also - the recipe is huge! Will likely cut recipe in half next time. Will try freezing in the meantime and see how well it holds up.

Cherry Tomato Corn Salad

Quick and Easy Alfredo Sauce

I guess I'm in the minority, but we did not like this at all. The only change I made was to use fresh garlic instead of powdered. Not good - won't be making it again.

The Best Banana Bread

I quickly skimmed through a few other reviews and made a few changes: I made a double batch, used 1/2c butter and 1/2c applesauce, used 1c brown sugar and 1/2c white sugar, used 2c flour and 2c oats, used ~2c bananas and ~1c zucchini (I was short on bananas), also added a splash of vanilla, some salt, and some cinamon. Also added a handful of sliced almonds and a handful of walnuts. Baked in rectangular pan for 45mins. Tasty and great texture! Only complaint is that it is still a little too sweet for me -- will cut back on sugar even more next time.

Sauerkraut Soup I

I'm surprised, but I did find this too tart. I will rinse the kraut next time and likely also add a bit of plain green cabbage to mellow it out. I also found that I was missing a bit of a smokey flavour. I would consider adding some bacon or something similar.

Fiesta Salad

Really quite delicious! I used brown rice, a little less mayo, and added two green onions instead of one (-we like green onion). I didn't have green chilies, so I used half of a 4oz can of jalapenos instead. Also quite good as left overs without the tomato and avocado (and would also likely be tasty with a bit of chopped red pepper, slivered almonds, or cilantro.) Will definitely make again - thanks!

Tomato-Topped Cod

The cod was moist and done perfectly after about 25 minutes. However, the fish itself was quite bland, and the onions still had a very raw taste to them. Next time I would season the fish itself a bit more and would sautee the onions prior to topping the fish.

Zucchini Cake III

Yum. I halved the recipe and baked in a smaller, rectangular pan (~6x11") for 50 minutes. I replaced half the oil with apple sauce, and did not bother with the glaze. I'm eating the cake right now (not paying much attention to the "let cool" instruction), and finding it a little sweet. I will cut the sugar to 3/4 cup. Otherwise, it's moist and delicious! (Update: half the recipe makes 12 medium muffins. Bake for 25 mins.)

Bagels I

I'm torn about this recipe. It started out as a disaster and turned out to be really great bagels. I used a mixer, and lost track of how much flour I ended up using (-more than the recipe - trying to salvage the big gooey mess). They turned out to be quite a bit of work, but the results were quite delicious (almost a bagel with a croissant character). (And yes - I agree with some of the others to cut back on the salt (particularly in the water).)

Paprika Chicken with Mushrooms

Just OK. Flavour was pretty good, but chicken was very dry (a shame - considering the amount of butter!) I might revamp this recipe a bit, cooking the chicken for a shorter amount of time, adding more vegetables (zucchini perhaps?), and incorporating into a pasta dish.

Health Nut Blueberry Muffins

Great muffins. I didn't have any oatbran, so I doubled the oats. I also substituted ground flaxseed for the wheat germ. I used brown sugar instead of regular sugar, and would have used ww flour instead of white flour if I hadn't run out of that too! I would suggest that if you can't eat all of these within a couple days, you freeze them. They did go slimy and moldy after about 4 days (-this, in my opinion, is actually a good thing. Unprocessed/un-preserved food shouldn't last indefinitely!)

Playgroup Granola Bars

Pretty good - though more of a cross between a granola bar and an oatmeal raisin cookie. I didn't have any wheat germ, so I used ground flax seed instead. I cut back on the brown sugar to 1/2 cup, but still found these a little too sweet so will cut back even more the next time. I think walnuts will make a nice addition for the next batch. (Also - these were done baking at about 21-22 mins.)

Home-Style Scalloped Potatoes

These were pretty good. Nothing spectacular, but it did the trick (and didn't require any fancy ingredients). Could have used a little more salt. I also found that I baked this closer to 90 minutes. For a dash more flavour, I sprinkled some parmesan cheese on each layer.

Fettuccini with Basil and Brie
