I quickly skimmed through a few other reviews and made a few changes:
I made a double batch, used 1/2c butter and 1/2c applesauce, used 1c brown sugar and 1/2c white sugar, used 2c flour and 2c oats, used ~2c bananas and ~1c zucchini (I was short on bananas), also added a splash of vanilla, some salt, and some cinamon. Also added a handful of sliced almonds and a handful of walnuts.
Baked in rectangular pan for 45mins.
Tasty and great texture! Only complaint is that it is still a little too sweet for me -- will cut back on sugar even more next time.
