When I was newly married, I didn't know you couldn't save a fresh chicken in the refrig. for 3 weeks! A coffeecake I tried to make for a bridal shower...

Cauliflower with Dijon Sauce
I cut down on the mayo (and used low fat) and much less cheddar and it was still delicious even though it wasn't swimming in sauce as I imagine it would have been. Husband and I both loved it!

Thai Shrimp and Noodles
This was pretty dry. If I ever make it again, I will find a liquid to add.

Thai Chicken Pizza with Carrots and Cilantro
I loved this, but my husband found it too spicy, due to the peanut sauce I used. I boiled the chicken breasts and pulled it apart and it worked fine. Very different and delicious!
