Broccoli and Cauliflower Casserole

It says to cook the rice in water-how much water? And then to drain it? The recipe also says to simmer the veggies for 10 min until crunchy. Mine were close to mushy by then. I wasn't sure how much milk was 5 3/5 oz so I just added 1/2 cup. I had all kinds of problems with this recipes. The end result was pretty bad.

BBQ Pork Salad with Summer Fruits and Honey Balsamic Vinaigrette

This was really, really yummy! The avacado added some nice smooth texture and contrasted well with the grapefruit and nectarines. I was looking for a cool main dish meal using pork and veggies and this fit the bill perfectly. Everyone in the family loved it. I mixed the dressing in a bowl instead of getting the blender dirty. Next time I grill out I'll do some extra pork chops and have a great start on the next meal.

Really wonderful granola. I didn't have any sunflower seeds or pecans. The cinnamon and maple syrup added a nice touch of flavor.

Bow Tie Pasta with Sausage and Sweet Peppers

This one is definately going into rotation. A great change from the usual tomato and diary based sauces. I used some other suggestions to tweak the sauce. I used a cup of broth, added some minced garlic, diced onion because we do like a lot of sauce. I didn't drain the sausage either, there wasn't more than 2 tablespoon fat and it added a lot of flavor. Sprinkled with parm cheese before serving too.

Italian Herb Bread I

Lovely loaves of bread. I didn't have the romano to add nor did I have olive oil so I used vegetable oil instead. They still turned out very nice with a crisp crust and slice beautifully. Very tender and tasty crumb. Thanks Ann!

Jambalaya Casserole

Easy and tasty dish. My changes: I didn't have any browning sauce..not even sure what that is. Didn't have any kind of hot pepper sauce so I susbstiuted some cayenne pepper. Didn't have the green onion or fresh tomato. I used diced tomatos (canned). After sauteing the veggies I added the rice and let that brown a little bit before adding the chicken stock. It seems to help the texture and flavor of the rice.

Whole Grain Waffles

Wonderful easy waffles that are good for you too? And they taste great? What is not to like about this recipe. I used whole wheat flour instead of the wheat pastry flour and oatmeal instead of the wheat germ. I let the batter rest in the fridge for about 45 min. before cooking them. This is my new waffle recipe.

Cream Cheese Kolacky

These are some seriously good cookies. I made a double batch and the family had eaten them all by the next day. I used apricot jam which was really yummy. Next time I'm going to try black raspberry.

Jam Filled Butter Cookies

Wonderful cookies. I used black raspberry jam and dusted with powdered sugar. Next time I'll add a touch more flour so they hold their shape a bit better.

Delicious Raspberry Oatmeal Cookie Bars

Really yummy cookie bars. I used a raspberry jam with seeds, didn't measure the jar, but I used about 8oz. Makes a small batch, these will be gone in a matter of hours I predict.

Chocolate Chip Crispies

Really good, quick snack. My family has been known to come to blows over the last one. Just kidding. We put the chocolate chips on top instead of with the other ingredients. Then spread the chips around while still warm to make a frosted effect. Watch your timing while bringing to a boil and don't overdo it or you'll end up with hard crispies. Underdo it and they turn out too sticky.

Chicken Tortilla Soup V

I had my doubts about this recipe, right up to my first bite. WOW. Really great soup. Easy to make. I put a small dollop of sour cream and jack cheese on top. And of course, make sure you serve over the tortilla chips. I did use 4 cans of chicken broth. Also increased the cumin to 1/2 tsp.

Roasted Garlic Mashed Potatoes

Really good potatos. I used about 4lbs. of potatos for 1 head of garlic, just right for us. Next time I'll try another reviewers suggestion of sour cream.
