Roasted Brussels Sprouts

Never had brussel sprouts before and these were great. THe more I ate, the more I liked them. The only difference I made was I added 3 cloves of minced garlic to the bag when shaking them up. Perfect!

Peppermint Patties

So easy to make and taste just like the ones bought in the store. Had to refrigerate them to get them to completely harden after dipping in chocolate. Ended up being a huge hit for Christmas last year and they are on my list to make this year.

Baby Blue Punch

I give 5 stars for the idea because I really wanted to do a blue punch for a boy baby shower. However, I couldn't find blue Kool Aid or white cranberry juice so I used blue Hawaiian punch and soda. It worked out and looked great.

Soft Sugar Cookies IV

These are great. Rolled them out and cut them into duck shapes for a baby shower. Used the Sugar Cookie Frosting (from this site) to outline the cookies in yellow and then used Sugar Cookie Icing (from this site) to fill them in. They were a hit at the baby shower.

Sugar Cookie Icing

This was great once I got it to the right consistency. I quadrupled this recipe because I had to ice 60 cookies. However, I had to add A LOT more corn syrup and milk to get this to a spreadable consistency. Don't know how much I added total but it ended up being over 1/4 cup of each. Worked great once I figured it out though.

Green Punch

Nice green color for Halloween. Tasted pretty good too. Froze an ice ring with gummy eyeballs in it so there were eyeballs floating in the punch bowl. The kids loved that. Will definitely make this again.

Pumpkin Whoopie Pies

Wow! That's all I can say is wow! Amazing. So worth it. These were the hit of our pumpkin carving party. The response everyone had when they took a bite was "Oh my God!"

Zesty Tuna Salad

As written, I give this recipe 3 stars. However, it's a good jumping off point. The ingredients all work together, the quantities just aren't enough. I can see why others say this is dry. I added more mayo, Dijon, and relish (don't know how much, I just eyeball it) and used green onions. Made a great tuna sandwich.

Mom's Zucchini Bread

Wow! I did want to make this lower fat so I did half oil, half unsweetened applesauce. I also substituted 1/2 cup of the white sugar for brown sugar. And I didn't measure the zucchini, just shredded two of them. So good. Best I've ever made.

Special Buttercream Frosting

FANTASTIC! Wonderful basic recipe. I doubled it to frost a 9" round layer cake and had some left over. Used 1/2 shortening and 1/2 butter for a richer flavor. Also, because I was using this to frost the Lemon Chiffon Cake from this site, I used 1 1/2 teaspoons of lemon extract instead of vanilla.

Lemon Chiffon Cake

I got so many compliments on this cake (made it for a bridal shower). The only change I made was to add 1 teaspoon of lemon extract to the batter and bake it in 2 9" round pans. I did find the cook time too much. I cooked it for about 20-25 minutes. Topped this with the Special Buttercream Frosting from this site (but added lemon extract to the frosting too).

Peach Cobbler II

Wow! That's all I can say. I did follow a couple other reviews by cutting the sugar in the peaches to 1 cup and using 7 peaches instead of 3. I also cut the water to 1 cup and made it in a 9x13 pan. Perfect.

Connie's Zucchini 'Crab' Cakes

These are good. I would never mistake them for crab cakes but a nice vegetarian option. Also a great way to use up the zucchini coming from the garden. I made the recipe exactly as it's written except that I baked them (350 for 15 min. each side) for a healthier approach. I also forgot to dredge them in flour first but they were fine.
