Unusual and delicious - a presentation cake. I'm not a super accomplished baker and I was able to pull it off exactly as written. Only having two round pans, I made one layer of plain white cake using 1/3 of the batter, which I put in the middle of the baked cake. To make up the bottom and top layers, I used 2/3 of the batter with the coffee crystals and baked this layer a few minutes longer, then cut it horizontally into two layers after it had cooled. When finished, my cake was striped with the white layer in the middle. It looked VERY pretty! I used Starbucks coffee liqueur and mascarapone cheese which made the filling TO DIE FOR! I decorated the top with grated semi-sweet chocolate, then made flowers with coffee beans as the center and small mint leaves as the petals. This cake really needs to rest a day before cutting for the flavors to blend and ripen. I will make this cake again but next time I will use more brewed coffee and liquour mix to spoon into the holes - I think it needed a little more coffee flavor. My guests raved and it looked and tasted fabulous - can't get better than that! Thanks for the recipe!
