It's Chili by George!!

This is DELICIOUS chili. I used a 2# chuck roast cubed and browned in place of the ground beef and used a couple of cans of diced tomatoes with chipotle peppers and some extra sauce in place of the juice - and a couple of tbls of tomato paste to thicken it a smidge. Cooked all day and served it at a family gathering with shredded cheddar on top and a corncake wedge on the side. Super tasty, very easy, and enjoyed by all. Thanks!

Baby Back Ribs

So tender, so delicious! These were the best ribs I've ever made OR eaten. Made them for company and everyone raved. I followed the directions exactly, being careful to tightly wrap each portion in foil. Marinated for a few hours since that was all the time I had, then I baked them for 2.5 hours then finished with about 10 minutes with more sauce on the grill. Used Sweet Baby Ray's sauce and it was a meal fit for kings. Beautiful. Thank you!

Mexican Rice II

I followed the recipe exactly, except that I substituted garlic powder for the garlic salt after reading reviews about the dish being salty. This was a good move as there was exactly the right amount of salt for us from the broth. The rice cooked up perfectly in about 40 minutes and had a beautiful texture. The flavor was VERY bland. If I make this again, I will definitely jazz it up with more cumin, some fresh garlic, some hot sauce and some minced peppers. My kids really liked the bland flavor but the only thing I liked about it was the texture.

Angel Lush

This is a good summer dessert - nothing extraordinary until you consider that it can be put together in five minutes, has just a few ingredients, can be made with all sugar-free and lowfat ingredients without ruining the taste, and looks pretty. I decorated mine with blueberries and sliced strawberries and it was lovely. My guests and family thought it was a keeper.

Beer Margaritas

Oh yeah - this went down DA BOMB with my guests. I doubled the recipe for eight people and should have tripled it - a double recipe was gone in about an hour. I followed the recipe exactly but added one can of diet sprite to a tripled recipe - I thought it was just a smidge too tart and the diet sprite took care of that. I floated sliced limes and lemons in the drink and it looked really pretty. Served over rocks. Everyone thought it was the best margarita they'd ever had and they couldn't believe the beer was in there! You can't taste it at all! Only down side was a friend with wheat allergy couldn't partake due to beer (but the rest of us enjoyed her share...).

Sesame Pasta Chicken Salad

My guests raved - everyone loved it!! I cut the oil down, added carrots, snow peas, finely chopped red bell pepper, and some Chinese chili sauce to the sauce for a little kick. I was very glad I followed reviewer's advice to add half the dressing when I made the salad and toss with the other half just before serving. I had both grilled chicken and grilled steak strips on the side for people to add their own meat to taste. Great company dish!

Candy-Coated Milk Chocolate Pieces Cookies I

Delicious flavor! I doubled the recipe and used all butter. It made about 50 nice big cookies and they went over great at a school function. These weren't particularly good warm but they were wonderful the next day. Will certainly make again! My husband who doesn't like cookies really loved these!

Amish Friendship Bread III

This is an absolutely delicious way to use up the starter. Very rich and flavorful cake. I made it as written but leaving out the nuts as the kids aren't crazy about them. My whole family loved this bread/cake, and it's even better after the first day. I made it in a Bundt pan and it took exactly 50 minutes to bake. I'm going to double the cinnamon next time to try it as a spicier bread, but it's delicious as written, too. Thanks!

Six Week Bran Muffins

Absolutely delish and EXACTLY what I was looking for. I scaled the recipe for 36 muffins. Used organic turbinado sugar for all the white sugar and used half whole wheat flour and half all-purp flour to make it a little healthier, but blew it by using butter for my shortening! Used a combo of Total raisin bran and All-Bran for my cereal and threw in a handful of craisins (cherry flavor) and a tsp of good vanilla. Sprinkled more raw sugar on top for crunch. These went over BIG BIG BIG with my family. Better after they've cooled than when they're hot, we think. Very moist and very tasty! I can see this being a daily thing for us - we all loved them - and how handy that I have a big container of batter in my fridge that will keep for a couple of weeks, but I know it won't last that long! Thanks!

Tiramisu Layer Cake

Unusual and delicious - a presentation cake. I'm not a super accomplished baker and I was able to pull it off exactly as written. Only having two round pans, I made one layer of plain white cake using 1/3 of the batter, which I put in the middle of the baked cake. To make up the bottom and top layers, I used 2/3 of the batter with the coffee crystals and baked this layer a few minutes longer, then cut it horizontally into two layers after it had cooled. When finished, my cake was striped with the white layer in the middle. It looked VERY pretty! I used Starbucks coffee liqueur and mascarapone cheese which made the filling TO DIE FOR! I decorated the top with grated semi-sweet chocolate, then made flowers with coffee beans as the center and small mint leaves as the petals. This cake really needs to rest a day before cutting for the flavors to blend and ripen. I will make this cake again but next time I will use more brewed coffee and liquour mix to spoon into the holes - I think it needed a little more coffee flavor. My guests raved and it looked and tasted fabulous - can't get better than that! Thanks for the recipe!

Hash Brown Casserole II

Absolutely delicious served with Honeybaked Ham for Christmas dinner. Big hit with all ages. I didn't have time to buy frozen potatoes and let them thaw, so I used Simply Potatoes from the refrigerator case. I doubled the recipe but used three packages of potatoes (two shredded hash browns, one diced potatoes with onions) and it was PERFECT. Used a combo of colby jack and sharp cheddar cheese. The casserole took a full hour to bake in a stoneware 9x13. Everyone - even the finicky kids - loved it. Thanks for the recipe! It will become a regular!

D's Famous Salsa

Great salsa recipe!! I used fresh tomatoes from the garden (so added a pinch of sugar) and doubled the garlic and cilantro. I also used a whole pablano pepper in place of the green chilis. It was quick, delish and so easy! Thank you!

Actually Delicious Turkey Burgers

These actually ARE delicious! I've never attempted to serve my family a burger that was white - they all looked at me as if I had two heads but they had a willingness to give it a try... and they were pleased! This is a delish way to cut fat, calories, and cholesterol. I used the recipe as written except using a torn up piece of whole wheat bread and a tsp of Italian seasoning in place of the breadcrumbs because I didn't have any. We really liked it and will definitely make again!

Cherry Cobbler I

Oh my - I'm eating this right now, warm from the oven. Following other reviewers, I halved the sugar in the pastry and halved the boiling water/sugar/cornstarch mixture. I added a half tsp of almond flavoring to the douch and baked 55 minutes. The consistency of the cherries with sauce is perfect! Not at all runny but nice, juicy and thick. The cake part is to die for - delicious flavor and lovely texture. Oh... this is good. I'm going back for more....

Lemon Garlic Tilapia

Pretty bland. I used a lot of garlic salt (which I hardly ever use) at the table to make it palatable to my family, but I've definitely had better. I cooked it in a skillet for about 5 minutes per side - nice moist texture.

Southern Peach Cobbler

Delicious. Next time I will make 1.5x the amount of the cake part, as there wasn't enough for my family's preference. I used 7 really big, almost overripe peaches and it was absolutely divine. Thanks for a keeper!

Fuzzy Navel Slush

This is the absolute perfect fun summer drink, especially for a group of ladies, ala bookclub or bunco. I made it as written except did not add sugar (thank goodness - it is VERY sweet) and I added a half bottle of vodka to the mix. It wasn't very strong, even with the vodka mixed in. This recipe took about 36 hours to freeze, so plan accordingly. Also, it served eight people with 2-3 slushes each and every drop was finished.

Overnight Blueberry French Toast

I made this for an Easter brunch and it was very well-received. Beautiful and delicious. I used two French bagettes cut in 1" slices and dried in my oven for an hour at 200, then quartered each slice after spreading with cream cheese. I used a big 9x13 stoneware dish and followed some of the reviewer's advice by cutting the eggs to 10 and cutting the cream cheese to one package - wish I hadn't done it. My great big dish could have handled the extras and there wasn't tons of cream cheese flavor, but everyone still loved it. I served the blueberry compote on the side and let guests ladle what they wanted on top of their serving. This was THE hit at our Easter brunch and I'm glad I was the one who brought it! Thanks for sharing the recipe!

Grilled Mahi Mahi with Roasted Pepper Sauce and Cilantro Pesto

I really cannot believe how delicious this dish is. It is restaurant quality! I pan-fried my mahi-mahi and followed the rest of the recipe as written, except for adding a pinch of sugar to the red pepper sauce. The presentation was gorgeous and the flavors of the fish, sauce, and pesto went brilliantly together. I tasted the sauce before serving and kind of went "ewww" but when served, it was wonderful in combination with everything else. Beautiful presentation! Quite a few dirty dishes but worth it. I only made one chunk of fish per person and should have made more. Plenty of sauce/pesto left over. For company I will make the sauce and pesto ahead of time and reheat. Thanks for this WONDERFUL recipe!!
