Mango Chicken Curry
I stumbled on this while looking for a different mango chicken dish on the site and decided to try it as it seemed easier :) The taste was awesome, but I did make a few tweaks that I think were very helpful.
I seasoned the chicken before cooking with some of the salt, pepper, cayenne, curry (which I at least tripled!) plus a lil bit of cornstarch. Helped the chicken take on a lot more flavor. Like others, I used a whole can of light coconut milk. Lastly, I used a whole can of diced tomatoes instead of the paste. Because of the extra liquid, be sure to increase the seasonings! I just kind of eyeballed it.
