Mango Chicken Curry
I stumbled on this while looking for a different mango chicken dish on the site and decided to try it as it seemed easier :) The taste was awesome, but I did make a few tweaks that I think were very helpful. I seasoned the chicken before cooking with some of the salt, pepper, cayenne, curry (which I at least tripled!) plus a lil bit of cornstarch. Helped the chicken take on a lot more flavor. Like others, I used a whole can of light coconut milk. Lastly, I used a whole can of diced tomatoes instead of the paste. Because of the extra liquid, be sure to increase the seasonings! I just kind of eyeballed it. Deeeeelicious.

Vinegar Cookies
My poor nut- and egg-allergic child has been deprived of cookie-making for so many years...I tried various recipes but they were so...weird, and labor-intensive to boot that i gave up and just made him rice krispie treats. Bu this recipe was SO easy and so delicious...the kids were super excited to help make them and we ate them almost as fast as they came out of the oven (though i think they're actually better and a little less greasy-tasting the next day). Made them as is except for leaving out the nuts. Baked on a silpat - easy peasy. We decided to call them Armpit Cookies bc my husband walked in to the kitchen while we were mixing up the dough and asked why it smelled like armit in there. :)

Peanut Butter Bars I
I would give it 4 stars based on my modifications but thought it unfair given that I didn' t follow the instructions exactly. I can see how they would be terrific with peanut butter and they were super easy to make! I have a peanut-allergic child so I used sunbutter (sunflower seed butter, available at Trader Joe's and similar stores) instead. The flavor is a lot more subtle, so next time I'd increase the sunbutter and/or decrease the chocolate (scandalous!). Even with the proportions as written, mine did not firm up until I put it in the freezer for about 20 minutes. After that I kept it in the fridge and it was fine. I ate about half of it myself :( Thanks for an easy and yummy recipe!
