Gingerbread Biscotti

I made this exactly as the recipe intructs. It was very sticky. I think these are delicious and I like the texture. I am going to make myself another batch and try the black pepper recommendation.

I scaled this down to 3 servings, and it was more than enough. Used raw peanuts instead of salted because that is all I had in the house. This is very good and very easy to make. I didn't find it to be the "couldn't stop eating it" concoction, but I like it.

The Best Bean and Ham Soup

Very nice recipe and very easy. Two changes I made. I did not use stock, I used water and a ham hock instead of ham. The soup was still very flavorful and had less fat and sodium using water instead of stock. I also quick soak the beans by boiling them for 3 minutes and then soaking them in the hot water for 1 hour.

Meatball Sandwich

Tasty recipe. Very easy. I used ground turkey to make the meatballs just to cut down on the fat. 20 minutes baking time was just right. Served with a green salad. Will make again.

Cheese Ravioli with Three Pepper Topping

I decided to greek it up a bit. I sauteed chicken in olive oil, lemon juice and garlic. Then I removed the chicken and sauteed the peppers in the same pan. Only used one cup of vegetable broth and returned the chicken to the pan with the broth. I also used spinach feta ravioli. I thought the peppers were too soft. They should be cooked less time. Served with a ceasar salad.

Mango Sorbet

Outstanding! I used two large mangoes, 3 Tbs symple syrup and 2 Tbsp honey. Juice of whole lime. Very easy to make. Excellent texture. Made just enough for a simple indulgence. Try it with a piece of dark chocolate candy.

BACARDI® Mixers Pina Colada Cake

Caribbean-Marinated Shrimp and Scallops

My husband did not care for this. I thought the flavoring was excellent. We both love jerk and we used a Jamaican seasoning that was just right. This is a very pretty dish. Was a shame the quality of the shrimp and scallops I used was not as good as the other vegetables in this recipe. I will enjoy the leftovers.

Lemon Zucchini Bread

Flavor is excellent. Timer was turned off during baking, so I had no idea how long it baked. Came out a bit undercooked. I added 1/2 teaspoon allspice and the zest of an entire lemon. Also used 1 Tbs canola oil in a 1/2 measuring cup and filled the rest of way with unsweetened applesauce. Only used 1/2 cup sugar. Love the lemon zucchini bread more than the orange.

Southwestern-Flavored Ground Beef or Turkey for Tacos & Salad

Three pounds of ground meat for 10 servings seemed quite a lot to me. I made this for a leaner taco salad, so I scaled down. Used half a large onion, 1 large garlic clove, 1 tsp oregano, still full Tbs cumin because we love cumin, 1 pound ground turkey with about 2 Tbs lime juice squeezed in while onions were sauteed. Still used the full can of tomatoes since this was for taco salad. I also used crushed white corn tortilla chips to thicken the mixture till it reached the consistency I preferred. This was excellent. It still made quite a lot for a taco salad.

Marrakesh Vegetable Curry

I followed the recipe to the letter. It was very tasty, but I did overcook the veggies. The flavors were wonderful, but since it was overcooked it was not very attractive on the plate. Served with white rice. Will try again and watch the pot more closely.

Basic Ham and Bean Soup

Easy. All ingredients in the house. Very tasty and basic. Only change was to follow another reviewer's suggestion and pureed half the beans to give it a better texture.

Slow Cooker Fifteen Bean Soup

This is excellent. I only have a 3-quart crock pot, so I downsized the ingredients. I also skipped the bacon alltogether and cooked the cabbage, carrots and onions in olive oil instead.

Carol's Arroz Con Pollo

Cooked it and served it in my cast iron skillet with the parsley sprinkled on top. Looked very pretty on the table. Tasty. My family is Colombian, and they are used to having this with prunes and olives stirred in. I used 1/4 cup tequila instead of wine. Also doubled the paprika. Served with steamed broccoli on the side. Yummy.

Uncle Mike's Vinegar Pepper Sauce

I loved this sauce. Mistake was that I made it to go with ribs. It is more a sauce for bullued pork or chopped beef. Very tasty though. Simple ingredients. I'll make some pulled pork next week to do it right.
