Dark Chocolate Cake I

I made this in a bundt pan... recipe was almost too large! I had to make a dozen cupcakes as well. It glazed very easily and was delish. thanks!

Pumpkin Muffins II

These were good, certainly not fantastic. I ended up adding pumpkin pie spice and using a whole tablespoon of cloves. Not enough spice! I used mini-loaf pans and had enough batter to make 14 loaves. Certainly twice what the author believed the recipe would yield.

White Chocolate Blondies

Okay, I made these one night when I was in a "I REALLY want something sweet, but I have not a lot in my pantry." I used 4 oz. of white chocolate and 4 oz. of homemade caramel, mixed that with the butter. I didn't have the chocolate chips, so I used a cup of chopped pecans, baked as directed. MMMMMM... MMMMMM... GGOOOOOOOODDDD. Very very satisfying. Love it!

Mango Coconut Sauce

I put this sauce together in my food processor, just dumped the mangos half in there and let the processor do the dicing and blending; and then heated the whole thing in the microwave instead of boiling it on the stove. I was impressed with the flavors. I thought they blended well. I poured the entire thing over an angelfood cake, and my guests raved. I would make this again, maybe over ladyfingers and ice cream next time.

Perch Fillets

I found this recipe intriguing more than anything. It was good. The fish had almost a tempura appearance, and the Sprite flavor did come through. I might try it again -- with Dr. Pepper ...

Easy Ice Cream Sandwiches

This turned out so good!! I made the batter as directed (only adding 3 tbsp. of flour at 5600 feet), but made one giant sandwich using 8" cake rounds. Baked at 310° for 25 minutes. I also topped it with mini M&Ms. It looked as good as it tasted. I took it to a girls' night out at a friend's house, and I was everyone's best friend that night.

Wicked Brownies

I thought these were great, easy-to-make fudge brownies. I did double the butter, as suggested, and used pecans vs. walnuts, but that's personal choice. I thought the flavor and the texture were both great!

Cantaloupe Fizz

I reduced the sugar, but added half a can of 7Up to the mixture. It diluted the strength of the gin, and blended the flavors much better than originally written. Good for a summer bar-be-que!

Savory Spinach Casserole

I took a shot at making this casserole for an office potluck. It was a MARVELOUS change from the everyday green bean casserole, or broccoli cheese casserole. I did squeeze the water as the other reviewers suggested, and I did mix the cream cheese and the spinach first. We are making it for Christmas dinner, we loved it so much.
