I love to cook and have most of my life. My sister still tells the story of me making Eggs Benidict (succesfully I might add) at the age of 9 with no help from my parents! When I like a food I am determined to make it myself just as good if not better than my insparation :)

Pumpkin Black Bean Soup
I really liked the soup. It’s a very simple and easy soup. Nothing gourmet about it, but it is very comforting on a fall night. I made a few minor modifications based of other reviews. I added some smoked paprika, cumin and cayenne pepper with the onion and butter to sauté. I also used a 29 oz can of pumpkin since I really wanted that to come through more and I used a can of diced tomatoes with chilies. All in all it’s a great recipe on the budget while satisfying.

Caramel Apple Eclair Cake
SO GOOD! Made this for a friends birthday because one of her favorites is Caramel Apples. Everyone LOVED it and all the guys were asking me to make it for their birthdays! Definatly a keeper!

Sweet Corn Cake
Wow this is the first time something that had such a great rating was a flop for me. I LOVE sweet corn cake at the restaurant and was craving it at home. I had everything on hand so I decided to make it. I am an experienced cook and followed the recipe but it was kinda gross. I baked it for over and hour and it had a really grainy texture and the taste was funky…I think it might have been the masa harina. I am going to try again.
