About this Cook
I joined The Pampered Chef in 2008. Now I am enjoying the recipes from this site that much more with high quality products. I got married in November 2008. I am also a mom of a teen son and daughter. I love to sing and you can find me at church when I am not at work or at home.
My favorite things to cook
I am known at church as the "Dessert Diva" so that tells you what I mainly cook. However, I do like to make most everything else.
My favorite family cooking traditions
My dad's side of the family is Italian and my mom's side is like a Pennsylvania Dutch/German style. So I love spaghetti and dumplings. (not together of course!) My mom has taught me most of my cooking skills. We traditionally have pork on New Year's Day, ham on Easter Sunday and turkey on Thanksgiving. She makes the best peach cobbler. I have tried to make it myself but I cannot get the cobbler part to taste and have the same "lightest" as hers. We all love those comfort foods in our family: slow-cooked roast beef, casseroles, chicken pot pie (not like the frozen ones) and stuffed pork chops. Are you hungry after reading this? I am!
My cooking triumphs
The only thing I can think of is I recently worked with two other ladies on a camp retreat and we cooked breakfast, lunch and dinner for 3 days for around 80 ladies. That was more like a miracle than a triumph!
My cooking tragedies
Almost anything in a slow cooker, especially roast beef. Don't know why; I follow instructions quite well. I think this is just one dish I am not meant to make. UPDATED 8/9/07 - I have finally mastered the slow cooked roast beef. Amen!

Spinach Tomato Tortellini
Olive Garden, you have nothing that can compare with this recipe! So delicious! I would double the amount of spinach but otherwise this was a perfect pasta dish! I will keep making this one for many years to come. SO EASY! My husband loved it! I will make for company and double the recipe.

Slow Cooker Chicken and Dumplings
Five stars with modifications. I used 6 chicken breast halves (left whole until 4 hours into cooking time). Added one bag of mixed vegetables. I didn't put any chicken broth in (better than water) until after putting in the biscuits which definitely needs to cook for 1 1/2 hours. I cut the biscuits into four pieces and stirred them into the chicken mixture. BONUS: I used a Montreal Chicken seasoning (1/4 cup) and fresh cracked black pepper. Seasoning was perfect! My husband said this recipe is so comforting. Even in the hot summer we enjoyed this dish!

Incredibly Cheesy Turkey Meatloaf
The mixture filled up my stoneware loaf pan to the top so I needed a baking sheet underneath to catch the drippings. This was very moist as I did soak the bread crumbs in the milk BEFORE mixing with the ground turkey. I will make this again and again.
