About this Cook
I got married in November 2008. I am also a mom of two. I love to sing and you can find me at church when I am not at work or at home.
My favorite things to cook
I am known at church as the "Dessert Diva" so that tells you what I mainly cook. However, I do like to make most everything else.
My favorite family cooking traditions
My dad's side of the family is Italian and my mom's side is like a Pennsylvania Dutch/German style. So I love spaghetti and dumplings. (not together of course!) My mom has taught me most of my cooking skills. We traditionally have pork on New Year's Day, ham on Easter Sunday and turkey on Thanksgiving. She makes the best peach cobbler. I have tried to make it myself but I cannot get the cobbler part to taste and have the same "lightest" as hers. We all love those comfort foods in our family: slow-cooked roast beef, casseroles, chicken pot pie (not like the frozen ones) and stuffed pork chops. Are you hungry after reading this? I am!
My cooking triumphs
The only thing I can think of is I recently worked with two other ladies on a camp retreat and we cooked breakfast, lunch and dinner for 3 days for around 80 ladies. That was more like a miracle than a triumph!
My cooking tragedies
Almost anything in a slow cooker, especially roast beef. Don't know why; I follow instructions quite well. I think this is just one dish I am not meant to make. UPDATED 8/9/07 - I have finally mastered the slow cooked roast beef. Amen!

Brown Sugar Smokies
The key is maple-flavored bacon and line the baking sheet with heavy duty aluminum foil to make clean up easy. In our circles I am asked to bring these to gatherings. They are known as "heaven on a stick".

Grits and Ham Casserole
This was an easy recipe. I really like garlic flavor so I doubled the garlic powder. It wasn't too powerful. Great way to use leftover ham. Smelled so good while baking in the oven. Definitely use the green onions as it adds color as well as important flavor.

Ultimate Chicken Fingers
I had these ingredients on hand and thought I'd try it. So glad I did. Crispy, delicious coating! Family enjoyed it very much. I love chicken fingers when I go out to eat. Now I think these are better than the deep-fried versions in restaurants. My tip would be to put only 3 strips at a time in the bag when coating. Add more garlic powder if you enjoy the flavor of garlic. Onion powder would probably be great too in addition to the garlic powder.
