Maple and Ginger Baked Beans
I use a half pound of bacon diced and fried in place of the salt pork. I sometimes use all molasses instead of the maple syrup. No matter how you make this one it is a keeper and tastes delicious.

Fluffy French Toast
I doubled the cinnamon like other reviewers suggested. I like each slice to be equally saturated with the egg mixture so I arranged my bread in a jelly roll pan and poured the mixture over all the pieces at once. I let it sit a few minutes and flipped the bread so the tops could soak up the remaining liquid. I fried the bread on a non-stick griddle with no extra oil or butter and the results came out great. Definitely a keeper.

Blueberry Zucchini Bread
Very tasty and moist. I doubled the recipe, reducing the sugar by a cup, and using apple sauce in place of half the oil. Makes great muffins as well.
